Fruity Spinach Salad With Tofu

Ingredients

  • Servings: 2
  • 3 cups loosely packed fresh baby spinach
  • 1/4 cup celery
  • 1/3 cup mandarin orange
  • 1/2 medium apple
  • 1/2 cup seedless grapes, halved
  • 2 tablespoons sliced almonds, toasted (optional)
  • fresh ground pepper
  • mrs. dash seasoning mix (optional)
  • 6 ounces mori nu firm tofu, crumbled
  • 1/2 cup fat-free raspberry vinaigrette

Recipe

  • 1 crumble the tofu. marinate over night in 1/2 cup dressing. note i use kens raspberry pecan for this.
  • 2 divide the spinach, celery, oranges, apples, grapes, and tofu between the two plates.
  • 3 sprinkle on the almonds. grind on the pepper and sprinkle on the dash. drizzle with remaining dressing.
  • 4 serves 2.
