Fruity Spinach Salad With Tofu

Ingredients
- Servings: 2
- 3 cups loosely packed fresh baby spinach
- 1/4 cup celery
- 1/3 cup mandarin orange
- 1/2 medium apple
- 1/2 cup seedless grapes, halved
- 2 tablespoons sliced almonds, toasted (optional)
- fresh ground pepper
- mrs. dash seasoning mix (optional)
- 6 ounces mori nu firm tofu, crumbled
- 1/2 cup fat-free raspberry vinaigrette
Recipe
- 1 crumble the tofu. marinate over night in 1/2 cup dressing. note i use kens raspberry pecan for this.
- 2 divide the spinach, celery, oranges, apples, grapes, and tofu between the two plates.
- 3 sprinkle on the almonds. grind on the pepper and sprinkle on the dash. drizzle with remaining dressing.
- 4 serves 2.
