Hoppin Johns

Total Time: 1 hr 30 mins Preparation Time: 30 mins Cook Time: 1 hr

Ingredients

  • Servings: 12
  • 1 tablespoon oil
  • 1 large ham hock
  • 1 lb smoked sausage
  • 1 cup onion, chopped
  • 1/2 cup celery, chopped
  • 1/2 cup red pepper, chopped
  • 1 tablespoon chopped garlic
  • 1 lb black-eyed peas, soaked overnight and rinsed
  • 1 quart chicken stock
  • 1 bay leaf
  • 1 teaspoon dry thyme leaves
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 3 tablespoons finely chopped green onions
  • 3 cups steamed rice

Recipe

  • 1 heat oil in large soup pot.
  • 2 add ham hock and sear on all sides, for about 4 minutes.
  • 3 add onion, celery, red pepper, and garlic, cook for 4 minutes.
  • 4 add black eyed peas, chicken stock, bay leaves, thyme and salt and pepper.
  • 5 bring to a boil, reduce heat and simmer for 40 mins, or until the peas are creamy and tender, stirring occasionally, adding water and or stock as needed.
  • 6 stir bean mixture into cooked rice and adjust seasonings to taste.
  • 7 garnish with green onion.
