Iowa State Chicken Parmesan

Ingredients

- 1 (8 ounce) can tomato sauce
- 1 teaspoon italian seasoning
- garlic powder, to taste
- 1/3 cup corn flake crumbs
- 1/4 cup parmesan cheese
- 1 teaspoon parsley flakes
- 2 lbs skinless chicken
- 1 egg, beaten
- 1 cup mozzarella cheese, shredded
Recipe
- 1 combine tomato sauce, italian seasoning and garlic powder in saucepan; cover and simmer, set aside.
- 2 combine corn flake crumbs, parmesan cheese and parsley flakes; mix well.
- 3 dip chicken in beaten egg and then roll in crumb mixture. place in 9 x 13 baking dish sprayed with non-stick coating.
- 4 cover with foil and bake at 375* for 1 1/4 to 1 1/2 hours.
- 5 pour seasoned tomato sauce mixture over chicken. sprinkle mozzarella over top and return dish to oven for 10-15 minutes or until sauce is hot and cheese melts.
