Guiltless Easy Oven Fried Chicken

Total Time: 1 hr 20 mins Preparation Time: 20 mins Cook Time: 1 hr

Ingredients

  • Servings: 4
  • 8 -10 chicken drumsticks
  • 1 (6 ounce) container plain yogurt
  • 3/4-1 cup breadcrumbs
  • salt & pepper (or i use adobo or some garlic, salt & pepper)
  • pam cooking spray

Recipe

  • 1 preheat oven 350°.
  • 2 skin and clean chicken.
  • 3 add yogurt to clean/skinned chicken.
  • 4 coat chicken pieces with yogurt.
  • 5 mix seasonings with bread crumbs.
  • 6 coat chicken pieces with breadcrumbs place on cookie sheet. give each piece a spray of pam.
  • 7 bake for about 1 hr, start checking for doneness after 50 minutes.

Hot Raspberry Rum Toddy

Total Time: 3 mins Preparation Time: 3 mins

Ingredients

  • Servings: 1
  • 2 whole cloves
  • 1 whole cinnamon stick
  • 1 celestial seasoning raspberry zinger tea bag
  • 1 -2 ounce rum, 1 if you don't want it too strong, 2 will give you a major warming of the bones
  • 2 1/2 teaspoons sugar
  • 1 dash lemon juice
  • boiling water

Recipe

  • 1 boil water.
  • 2 while water is boiling put cloves, cinnamon stick, tea bag, rum, sugar, and lemon juice in your favorite mug.
  • 3 fill mug with boiling water, serve and enjoy!

Low Fat Low Cal Lasagna

Ingredients

  • 1/2 lb ground chicken
  • 1 cup mushroom, sliced
  • 1 cup green pepper, diced
  • 1 cup onion, diced
  • 26 ounces marinara sauce
  • 15 ounces part-skim ricotta cheese
  • 2 egg whites
  • 1/2 teaspoon pepper
  • 4 cups part-skim mozzarella cheese
  • 1/2 tablespoon sugar
  • 3 garlic cloves
  • 1 tablespoon italian seasoning (divided)
  • 1/4 teaspoon red pepper
  • 1 teaspoon mexican oregano
  • 1/2 tablespoon worcestershire sauce
  • 1/4 cup parmesan cheese
  • 8 ounces lasagna noodles (barilla no boil noodles work great!!)

Recipe

  • 1 pre heat oven to 375.
  • 2 in large pot brown ground chicken.
  • 3 add all veggies and cook until onions are translucent.
  • 4 add sauce, sugar, 1/2 tbsp italian seasoning, red pepper, oregano, worcestershire sauce, bring to a boil and then simmer uncovered 10 minutes.
  • 5 meanwhile mix ricotta cheese with the egg whites, pepper and the remaining 1/2 tbsp italian seasoning.
  • 6 spray a 13x9x2 pan w/ no stick cooking spray.
  • 7 layer noodles cheeses and sauce as you would lasagna.
  • 8 bake covered w/ foil for 30 minutes.
  • 9 remove foil and bake another 15 minutes or until hot and bubbly.
  • 10 let stand for 10 minutes before serving.

Hot Pizza Dip

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 8
  • 1 (8 ounce) package cream cheese, softened
  • 1 cup pizza sauce
  • 1 teaspoon italian seasoning
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded parmesan cheese
  • 2 tablespoons finely chopped green peppers
  • 2 tablespoons finely chopped onions

Recipe

  • 1 combine cream cheese and italian seasoning.
  • 2 spread in bottom of shallow dish, i use a ceramic pie dish.
  • 3 combine cheeses and sprinkle 1/2 over cream cheese mixture.
  • 4 spread pizza sauce evenly over cheese (use more if it doesn't cover) top with onions, green pepper and remaining cheese.
  • 5 bake 15-18 minutes at 350 degrees.
  • 6 you can also microwave until heated and bubbly.
  • 7 serve with your favorite crackers.

Greek Salad With Feta Mousse

Ingredients

  • Servings: 4
  • 6 ounces greek feta cheese, crumbled (1 1/2 cups)
  • 1/2 cup heavy cream
  • 3/4 teaspoon unflavored gelatin softened in 1 1/2 tablespoons water
  • fresh ground pepper
  • 2 1/2 lbs heirloom tomatoes, mixed (sliced, quartered or halved)
  • fleur de sel and fresh coarse ground black pepper
  • 1/4 cup extra-virgin olive oil
  • 16 pitted kalamata olives, halved
  • 1/4 cup thinly sliced red onion
  • 1 tablespoon chopped fresh oregano

Recipe

  • 1 in a small skillet, combine the feta and cream and simmer over moderate heat until the feta is slightly melted, about 1 minute. stir in the softened gelatin and transfer to a blender. puree until fairly smooth. season with pepper. scrape the mixture into a shallow bowl and refrigerate until set, about 30 minutes.
  • 2 bring the feta mousse back to room temperature, about 20 minutes. whisk the mousse until loosened. spread the mousse in the center of each plate. top with the tomatoes, lightly seasoning each layer with fleur de sel and black pepper. drizzle with the olive oil, garnish with the olives, red onion and oregano and serve.

Hidden Valley Four Cheese Pasta Bake With Spinach And Bacon #rsc

Ingredients

  • 1 (1 ounce) package hidden valley original ranch seasoning mix
  • 16 ounces cavatappi pasta, cooked per package instructions
  • 3 1/2-4 cups chicken, cooked and diced
  • 12 ounces apple-smoked bacon, prepared accordingly drained & crumbled
  • 6 ounces baby spinach, torn and stems removed
  • 5 -6 garlic cloves, finely diced
  • 2 shallots, finely diced
  • 1 cup havarti cheese, grated (aged)
  • 1 cup fontina cheese, grated (semi-soft)
  • 1/2 cup gruyere cheese, grated
  • 1/2 cup parmesan cheese, grated
  • 3 cups 2% low-fat milk
  • 7 ounces 2% low-fat greek yogurt
  • 7 tablespoons butter
  • 1/4 cup flour
  • 2 cups panko breadcrumbs

Recipe

  • 1 pre-heat oven to 325 degrees. melt 4 tbsps of butter in a large pan over medium heat. add shallots and garlic and saute for 3 minutes, stirring constantly. whisk in flour and blend thoroughly. slowly add milk, whisking constantly until the mixture is well blended. immediately add the yogurt and 1 oz packet of hidden valley original ranch seasoning mix and continue to stir until mixture begins to thicken. once mixture is smooth, add the fontina, havarti & gruyere cheeses and blend until the cheese is melted. turn off the heat and add the spinach. once the spinach is wilted, carefully add in the diced chicken and bacon. pour the mixture into a 13 x 9 dish that is coated with cooking spray and use a spatula to spread it evenly. combine panko breadcrumbs and 1/2 cup of parmesan cheese in a bowl. melt 3 tbsps. of butter and toss with the panko mixture until thoroughly combined. spread mixture evenly on top of the casserole and bake on the middle rack for 25-35 minutes, or until the breadcrumbs are golden brown and mixture is bubbly.

  • 2 cups long brown rice

  • 3 dashes mrs. dash seasoning mix, original

  • 1 spray pressure cooker with cooking oil.
  • 2 add all ingredients to pressure cooker.
  • 3 once pressure is achieved, set timer for fifteen minutes.
  • 4 let pressure drop by its own accord and keep lid on until ready to serve.
  • 5 this will yield a rice that is not dry, maintains a nice consistency and is far better than any stovetop version.

Recipe

  • 1 in a small bowl, combine curry powder and salt.
  • 2 separate florets of cauliflower and cook in boiling water until cooked, but still crisp.
  • 3 drain and add to seasonings. mix to coat well.

  • 1 cup plain greek yogurt
  • 1/2 cup melted butter
  • 1 cup breadcrumbs
  • 1 (1 ounce) package hidden valley original ranch seasoning mix
  • 1/4 cup grated parmesan cheese

Recipe

  • 1 wash chicken, coat in greek yogurt.
  • 2 mix hidden valley ranch seaoning with the bread crumbs and parmesan cheese in a gallon size baggie.
  • 3 put the coated chicken in and coat with bread crumb mixture, grease a 9x13 pan layer chicken pour melted butter over the top. bake at 350 for 30 minutes or until chicke is no longer pink.

Hidden Valley Artichoke Appetizer Fingers

Ingredients

  • 2 1/2 cups shredded mild cheddar cheese
  • 2 (6 ounce) jars marinated artichoke hearts, drained and chopped
  • 8 soda crackers, crushed (unsalted tops)
  • 1 (1 ounce) packet hidden valley original ranch dressing mix
  • 4 eggs, beaten
  • 1/3 cup minced green onion

Recipe

  • 1 preheat the oven to 350°f
  • 2 in a large bowl, combine the cheese, artichoke hearts, soda crackers, seasoning mix, eggs, and green onion and stir until well mixed.
  • 3 pour the mixture into a buttered 8x8-inch baking pan.
  • 4 bake for 20 to 25 minutes or until a knife comes out clean.
  • 5 let stand for 20 minutes before cutting into squares.

Italian Cannelloni

Ingredients

  • Servings: 4
  • 2 tablespoons vegetable oil or 2 tablespoons olive oil
  • 1/4 cup finely chopped onion
  • 1 teaspoon finely chopped garlic (about 2 cloves)
  • 1 1/2 lbs ground beef
  • 1/2 lb ground lamb
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons cream or 2 tablespoons milk
  • 2 eggs, slightly beaten
  • 1 teaspoon oregano
  • 1 dash pepper
  • 200 g cannelloni tubes or 200 g manicotti, can be used
  • 796 ml spaghetti sauce or 796 ml homemade spaghetti sauce
  • 2 tablespoons butter or 2 tablespoons margarine

Recipe

  • 1 in oil in a large frypan, cook and stir onion, garlic until the onion is tender.
  • 2 add beef and lamb and continue cooking until beef is brown. remove from heat and drain excess oil.
  • 3 mix in half the parmesan cheese, cream, eggs and seasonings.
  • 4 when cool enough to handle, stuff uncooked cannelloni noodles with mixture. spread a thin layer of sauce on the bottom of a 3.5 litre pan. arrange stuffed cannelloni in a single layer and pour remaining sauce over, being certain to cover all the pasta.
  • 5 sprinkle with the remaining parmesan and dot with butter.
  • 6 cover with foil and bake at 375 f for 55 -60 minutes or until tender when pierced with a fork. (during last 10 minutes shredded mozzeralla can be sprinkled on top and the foil removed if desired.).

  • 1/4 cup red wine vinegar
  • 1/2 teaspoon salt

Hidden Valley Crab Cakes #rsc

Ingredients

  • 1 lb jumbo lump blue crab meat or 1 lb lump crabmeat
  • 1/2 cup panko breadcrumbs
  • 1 large egg, beaten
  • 1 1/2 teaspoons hidden valley original ranch seasoning mix
  • 2 tablespoons greek yogurt
  • 1/2 teaspoon finely chopped chives
  • 1/2 teaspoon mustard
  • 1/4 teaspoon worcestershire sauce
  • 1 teaspoon old bay seasoning
  • 1/4 teaspoon lemon zest
  • salt

Recipe

  • 1 1.carefully check the crab meat for any cartilage. put meat in a bowl and set it aside.
  • 2 combine remaining ingredients and pour over crab meat and gently fold in the crab. only mix enough to combine ingredients and avoid breaking up the crab meat into shreds. shape into 6 crab cakes, and refrigerate for at least 1 hour.
  • 3 broil until golden brown (5 minutes each side) or deep fry at 350°f for about 2-3 minutes.

Ingredients

  • 1 loaf frozen bread dough, thawed 1 (pound)
  • 1/4 cup butter, softened
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon oregano
  • 1/4 teaspoon marjoram
  • 3/4 cup shredded mozzarella cheese
  • 1 egg
  • 1 teaspoon water
  • 2 tablespoons sesame seeds or 2 tablespoons grated parmesan cheese

Recipe

  • 1 on a lightly floured surface, roll dough into a 12-in square. combine butter and seasonings; spread over dough. sprinkle with mozzarella cheese.
  • 2 fold dough into thirds. cut crosswise into 24 strips,1/2 inches each. twist each strip twice; pinch ends to seal. place the strips 2-in apart on a greased baking sheet. cover and let rise in a warm place until almost doubled, about 30 minutes.
  • 3 in a small bowl, beat egg and water; brush over the twists.
  • 4 sprinkle with sesame seeds and /or parmesan cheese. bake at 375* for 10-12 minutes or until lightly golden brown.

Greek Salad With Squid

Total Time: 15 mins Preparation Time: 10 mins Cook Time: 5 mins

Ingredients

  • Servings: 4
  • 1 medium cucumber
  • 2 medium tomatoes
  • 1 large green pepper
  • 1/2 medium red onion, thinly sliced
  • 1/2 cup greek olives or 1/2 cup common black olives
  • 2 tablespoons red wine vinegar
  • 1/4 cup olive oil
  • 2 teaspoons finely chopped fresh oregano or 1 teaspoon dried oregano
  • salt and pepper
  • 1 lb squid, tubes cut into 1/2 inch rings
  • 4 ounces feta cheese, crumbled

Recipe

  • 1 cut the cucumber in half lengthwise, then again into quarters and finally crosswise into small chunks.
  • 2 core the tomatoes, then cut each into quarters, then cross into small chunks.
  • 3 cut the core from the green pepper, and removed and discard the seeds and ribs inside.
  • 4 cut the pepper lengthwise into 1-inchstrips, then across into chunks.
  • 5 put the cucumber, tomato, green pepper, onion and olives in a large bowl and set aside.
  • 6 in a small bowl, combine the vinegar, oil, oregano, a small pinch of salt and a generous pinch of pepper.
  • 7 stir vigorously with a fork and taste the dressing for seasoning.
  • 8 set aside.
  • 9 bring a medium pan of salted water to a boil, add the squid rings and cook for 30 seconds.
  • 10 drain immediately, rinse with cold water and drain again thoroughly.
  • 11 add the squid rings to the bowl of vegetables and pour over the dressing.
  • 12 stir gently to coat all the ingredients evenly with dressing; when squid is slightly warm it absorbs more flavors from the dressing.
  • 13 sprinkle with the feta and set aside for about 1 hour, or let cool completely and pack into airtight containers for your picnic.

Hot Potato Salad With Kielbasa

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 6 potatoes, peeled and sliced
  • 6 slices bacon (more if desired)
  • 1 onion, chopped
  • 1/4 cup flour
  • 1 cup water
  • 1/2 cup vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 lb kielbasa
  • 3 eggs, hard cooked
  • pepper, to taste

Recipe

  • 1 cook potatoes, drain and keep warm.
  • 2 heat kielbasa in water to cover. retain water and keep meat warm.
  • 3 brown and drain bacon. in 1/4 cup of drippings cook onion until tender. add flour to drippings and onion.
  • 4 add water and vinegar. stir until thick. if too thick add additional water.
  • 5 add sugar and seasonings. remove from heat. pour over warm potatoes and add kielbasa and crumbled bacon and chopped eggs.
  • 6 serve or keep warm in slow cooker.

Low Fat Lasagna Roll Ups! (vegetarian Too!)

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 8 ounces fat-free ricotta cheese
  • 4 ounces fat free parmesan
  • 6 lasagna noodles
  • 1 egg
  • 1/4 cup basil
  • 1/8 cup parsley
  • 1/8 cup oregano
  • 1/2 teaspoon pepper
  • 1/4 cup fat free mozzarella cheese
  • 2 cups pasta sauce

Recipe

  • 1 cook lasagna noodles and drain; no need to include salt if keep stirring.
  • 2 cut noodles in half length-wise and let sit for a couple of minutes for easier handling.
  • 3 in bowl, combine ricotta, egg, parmesan, basil, oregano, parsley and pepper; adjust seasoning to your tastes --- can include garlic if desired.
  • 4 place 3/4 cups of pasta sauce in baking pan.
  • 5 with cooled noodle, place above mixture on top to cover all of the noodle (about 3 teaspoons).
  • 6 roll from closest end to you and place upward into baking pan.
  • 7 complete process with rest of noodles and top with rest of pasta sauce; add mozzarella cheese on top.
  • 8 bake in 180 f oven for about 15 minutes covered with al foil.
  • 9 remove al foil and bake for an additional 20 - 25 minutes until lightly brown on top.
  • 10 enjoy!
  • 11 note: i served on bed of rocket, tomatoes, and feta.

Guilt- And Yoke-free Curried Deviled Eggs

Total Time: 15 mins Preparation Time: 15 mins

Ingredients

  • 6 hard-boiled egg whites (hard boil 6 eggs, reserve yolks for another use)
  • 4 ounces egg beaters egg substitute (i used the latter) or 4 ounces pasteurized liquid egg-whites (i used the latter)
  • 1/4 teaspoon mrs. dash tomato basil garlic seasoning
  • 1/4 teaspoon onion powder
  • 4 tablespoons low-fat mayonnaise (more if you like a thinner mixture)
  • 1 teaspoon patak's mild curry paste
  • 1 teaspoon lemon juice
  • paprika, to garnish
  • chopped cilantro, to garnish

Recipe

  • 1 pour egg beaters or liquid egg whites into a non-stick skillet, season with onion powder and mrs. dash seasoning and cook over medium heat until whites are set, about 10 minutes.
  • 2 remove from pan and roughly chop in food processor.
  • 3 combine mayonnaise, curry paste and lemon juice and stir until well-blended. add to the chopped egg whites and process until smooth.
  • 4 spoon mixture into a sandwich-sized zip lock baggie, remove as much air as possible and seal the top. cut a 1/2-inch sized corner from the bottom of the baggie to use as a pastry bag. you could also make a cone out of waxed paper and snip the bottom tip of that, but this is my favorite method.
  • 5 squeeze portions of "yoke" mixture into hard-boiled egg halves. garnish with paprika and chopped cilantro.

Italian Breakfast Biscuit

Total Time: 50 mins Preparation Time: 30 mins Cook Time: 20 mins

Ingredients

  • Servings: 8
  • 1 (16 1/2 ounce) package large refrigerated biscuits (like grands!)
  • 1 cup part-skim ricotta cheese
  • 2 teaspoons italian seasoning
  • 8 medium eggs
  • salt
  • pepper

Recipe

  • 1 preheat oven to 400°.
  • 2 spray 8 jumbo muffin cups with nonstick cooking spray.
  • 3 place one biscuit in each cup, and press into bottom and all the way up the side.
  • 4 mix ricotta with italian seasonings, and place 2 tablespoons in each cup, spreading it all around the inside.
  • 5 scramble each egg in a bowl (custard cup works well), then pour into a muffin cup, and season with salt and pepper.
  • 6 bake for 20 minutes until the egg is set.
  • 7 205 calories.

Flax Meal Pizza Crust

Ingredients

  • 1/4 cup flax seed meal ("golden" flaxmeal recommended)
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon nu-salt
  • 1 tablespoon italian seasoning
  • 1/8 teaspoon splenda sugar substitute
  • 1 tablespoon parmesan cheese (grated)
  • 1 egg
  • 2 teaspoons water
  • 2 teaspoons olive oil

Recipe

  • 1 preheat oven to 375 degrees.
  • 2 mix dry ingredients, then add egg, water, and oil.
  • 3 spread batter on a silicone baking mat on a cookie sheet.
  • 4 bake 8 minutes or until top is dry and bottom is crispy. flip crust over and bake an additional 5 minutes or so.
  • 5 crust can be made even more crispy by heating in a pan on the stovetop after baking.
  • 6 transfer to cookie sheet (minus silicone mat).
  • 7 top crust with sauce, cheese, and favorite toppings.
  • 8 bake until cheese is melted. broil to brown cheese and crisp pepperoni.

Italian Cheese Spread

  • 1 loaf sweet italian bread
  • 8 ounces cream cheese
  • 2 tablespoons italian seasoning
  • 1 tablespoon crushed garlic

  • 1 cut your loaf in vertical pieces.
  • 2 mix your cream cheese and seasoning and garlic.
  • 3 spread on bread pieces and serve!

Goat Cheese Mashed Potato Pizza With Savory Shrimp Topping

Ingredients

  • Servings: 8
  • 3 cups simply potatoes traditional mashed potatoes
  • 3 ounces soft fresh goat cheese
  • 1 (12 inch) prepared pizza crust
  • 2 tablespoons olive oil, divided
  • 12 ounces small shrimp, peeled and deveined
  • 2 cups spinach, chopped
  • 1/2 cup sun-dried tomato, drained and chopped
  • 1 teaspoon italian seasoning

Recipe

  • 1 heat oven to 425 degrees.
  • 2 peel film at corner of simply potatoes package to vent and heat on high for 3 minutes in microwave. completely remove film and stir. stir in goat cheese. microwave on high for 1 additional minute.
  • 3 place pizza crust on ungreased cookie sheet; brush with 1 tablespoon oil.
  • 4 spread mashed potato mixture over crust.
  • 5 meanwhile, heat remaining 1 tablespoon oil in 12-inch nonstick skillet. sauté shrimp for 3 minutes. stir in spinach, sun-dried tomatoes, and italian seasoning; cook 1 minute or until spinach wilts. scatter shrimp mixture over mashed potatoes.
  • 6 bake pizza until heated through, 8 to 10 minutes.

Garbanzo Tacos

Hot Pink! - A Spicy Chicken Dish

  • 1 chicken breast, skinned, cut into 1/2-inch sized cubes
  • 1 small tomato, cut in small pieces
  • 1/4 cup chopped yellow onion
  • 2 garlic cloves, minced
  • 1 -2 serrano pepper, sliced thin
  • 1 tablespoon olive oil
  • 1 cup fresh spinach, cut up into small pieces
  • 1/2 lemon, peel and flesh minced
  • 2 teaspoons soy sauce
  • 1 teaspoon lemon pepper seasoning (to taste)
  • 1 tablespoon pickled beet juice (this makes the chicken "hot pink")

Recipe

  • 1 chop and cut everything first. place in separate dishes.
  • 2 heat skillet (i use cast iron) on medium heat until hot. add olive oil, let get warm in pan for one minute or less. add garlic, onions and in serrano peppers. turn heat to medium low. cook until onion is clear or before garlic gets brown. remove from heat and set aside.
  • 3 season chicken with soy sauce and lemon pepper. mix together well. turn heat back up to medium. put the seasoned chicken in the skillet and cook chicken pieces in the oil that remained in the pan after cooking the garlic/onion/pepper mixture. add more oil if needed. cook until done. when the chicken is cooked through until there is no pink in the middle, add the pickled beet juice and stir until all the pieces are pink. add the spinach, tomatoes and garlic/onion/pepper mixture back in with the chicken. stir quickly to mix and remove immediately.
  • 4 serve alone or on top of brown rice. this is a healthy and quick lunch for two to four. to cook ahead, do all the above steps, setting aside the spinach and the tomatoes to add when reheated.

Goat Cheese In Grape Leaves

  • 1 soak 8 wooden cocktail sticks in cold water for 1/2 hours rinse the vine leaves under cold running water, then soak in a bowl of cold water for 15 minutes. rinse again under running water and then repeat one more time. (the repeated rinsing, removes the saltiness of the brine).pat dry with kitchen paper towel.
  • 2 to make the filling: dry-fry the pinenuts over a medium heat for about 5 minutes until they release their aroma and are a light golden brown. remove from the heat and keep aside.
  • 3 lay the vine leaves out on a flat surface and place a slice of chevre in the centre of one. spread a little of the pesto on the top of the cheese then sprinkle with a few pine kernels.
  • 4 fold the edges of the vine leaf over the filling and place another leaf on top. turn the parcel over and fold the ends into the centre in the same way. secure the outer flaps by threading a cocktail stick through the corners then brush the wraps with olive oil.
  • 5 grill the parcels over the barbecue for 4 minutes, or until the cheese starts to melt and the leaves become a dark brown colour turning the parcels once halfway through grilling.
  • 6 meanwhile, wrap the baguette in foil (or brush it with oil and place it directly on the cooking grate) and warm over direct high heat for 3 minutes, turning every minute.
  • 7 to serve: open the parcels, discard the leaves and spread the melted cheese onto crusty baguettes, adding seasoning to taste.

  • 1 put crabmeat in a bowl and gently sort through it for pieces of shell with a 2-pronged fork.

Karela (bitter Melon Or Gourd)

Ingredients

  • 1 lb bitter melon (karela)
  • 2 potatoes, peeled,cut in long strips and half cooked
  • 2 chopped onions
  • 2 chopped tomatoes
  • 2 tablespoons oil
  • 1 teaspoon cumin seed
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon red chili powder
  • 1 1/2 teaspoons coriander powder
  • 1/2 teaspoon mango powder
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt

Recipe

  • 1 rinse bitter melon.
  • 2 trim on both ends as needed and scrape any blemishes or hard skin.
  • 3 cut into small rounds.
  • 4 heat the oil in a skillet on medium-high heat.
  • 5 add karela almost in a single layer; stir and cook until brownish.
  • 6 reduce the heat if they tend to burn.
  • 7 add the onions, potatoes and all the seasonings; stir until the potatoes are cooked.
  • 8 add the tomatoes.
  • 9 cook slowly on medium low heat, half covered, stirring as needed, until everything is cooked.
  • 10 variation: to make stuffed karela: mix all the seasonings for stuffing, substituting 1 teaspoon cumin powder for cumin seeds.
  • 11 using a paring knife, make a long slit in each karela, from one end to another (leaving two ends and bottom of the pod intact).
  • 12 keep the slit open with your thumb and use a spoon to fill the opening with the stuffing.
  • 13 stuff all the karela this way.
  • 14 cook karela in a wide skillet using 2 tablespoons oil, almost in a single layer, on medium heat.
  • 15 stir gently so that stuffing does not come out.
  • 16 when half cooked, add the onions.
  • 17 reduce heat to medium low, cooking slowly, half covered or uncovered, until karela are browned.

  • 8 boneless lamb loin chops (3/4 oz thick and 6 oz each)
  • 4 teaspoons canola oil
  • 2 large onions, sliced
  • 1 medium green pepper, cut into strips
  • 1 medium yellow sweet pepper, cut into strips
  • 1 (10 3/4 ounce) can condensed tomato soup, undiluted
  • 2/3 cup water
  • 1 teaspoon creole seasoning (tony chachere's is the best or see note at bottom of recipe if you don't have any on hand)

Recipe

  • 1 in a large skillet (or the electric skillet works well to hold everything), heat oil over medium-high heat and brown lamb chops on both sides in batches. set aside and keep warm.
  • 2 in the same skillet, saute the onions, green pepper and yellow pepper until tender (about 7-10 minutes).
  • 3 reduce heat to medium and return lamb chops to skillet.
  • 4 combine the soup, water, creole seasoning, pepper and salt and pour over the chops; bring to a boil.

  • 1 make or buy one pizza dough that will make one 12" diameter pizza. preheat oven to 500 degrees and place your pizza stone on the middle oven rack. semi pack one cup of spinach leaves with stems removed. put into a food processor. add parmesan cheese, garlic, hidden valley ranch mix, salt, pepper, almonds, and extra virgin olive oil. process, pushing sides down until a smooth puree results. set aside. heat 10" skillet between medium-low and medium heat. when heated, add 1 t. butter and 1 t. extra virgin olive oil. add shallot slices for 30 to 45 seconds. remove shallots to paper towel lined bowl. while pan is reheating, dry shrimp and then rub jerk seasoning on shrimp. sautee shrimp for 1 and 1/2 minute per side. remove to bowl and add 1 t. sriracha. set aside. take pizza dough and place on pizza peel. take 1/3 cup hidden valley pesto and evenly spread on dough. top pesto with mozzarella. add shallots and shrimp to top of pizza. sprinkle smoked paprika on top. place pizza on baking stone and bake for 6 to 7 minutes. remove from oven and sprinkle on remaining parmesan cheese. slice and enjoy.

Eva Bond's Meatloaf

  • 1/2 green pepper, finely chopped
  • water, for coating
  • 1/2 cup ketchup
  • 1/3 cup water
  • 4 tablespoons brown sugar

Recipe

  • 1 preheat oven to 350.
  • 2 spray a baking dish large enough to hold the meatloaf plus a little additional space, using non-stick spray.
  • 3 mix the meat mixture ingredients well; mold into a loaf shape in the baking dish, making sure you leave space between the loaf and the sides of the pan to permit draining of excess oil.
  • 4 with a pastry brush or your hands, moisten the top and side sof the meatloaf with cold water to prevent crumbling.
  • 5 bake uncovered for 1 hour and 15 minutes.
  • 6 drain off the liquid from the meatloaf, and slice in the pan, leaving the slices standing vertically.
  • 7 mix the sauce ingredients well, then pour over the slices of meatloaf, making sure you get some between each slice, and all over the top.
  • 8 bake for an additional 30 minutes, uncovered.
  • 9 note: if you can't find lawry's meatloaf seasoning you can use another commercial brand, or your own homemade.
  • 10 however, note that lawry's does seem to have some flour-based filler to it also, so if what you are using does not, and it is just spices and herbs, i would suggest adding 3 or 4 tablespoons of very fine bread crumbs to the uncooked meat mixture.

Hickory Smoked Lamb Butts

Total Time: 3 hrs Preparation Time: 1 hr Cook Time: 2 hrs

  • jack's old south hickory dry rub seasonings
  • yellow mustard
  • brown sugar
  • garlic powder
  • apple juice

Recipe

  • 1 trim and season the lamb butt's and let them sit wrapped in the refrigerator over night. this allows the seasoning to get into the meat.trim most of the excess fat off the lamb butts.
  • 2 rub the butt's down with good old yellow mustard. the mustards flavor will drastically change when smoked. shake on some garlic powder. next liberally coat the lamb butts with jack's old south hickory dry rub.now sprinkle on a generous amount of brown sugar and rub it in good. turn the butt's and repeat the seasoning steps above.
  • 3 once the lamb butt's are seasoned, wrap them in plastic wrap and refrigerate over night.
  • 4 next morning -- get an early start as this cook may take anywhere from 10 to 14 hours depending on the size of the butt's and the fat content. i started at 5 am for this cook.
  • 5 pre-heat your smoker to 225 degrees. once the smokers going you can remove the lamb butt's from the refrigerator and unwrap them. pour some tree top apple juice into a cup. using a sterile flavor injector, start injecting the the meat every 2" to 3" and slowly draw the needle back as you inject. this will evenly distribute the injection throughout the meat.
  • 6 once your smoker has come up to temp and the lamb is injected place them in your smoker evenly space apart. if your cooker has a hotter area place the largest piece of meats in that area. now close the lid and let them slow cook for 2 to 3 hours.
  • 7 place some apple juice in a clean misting bottle. use this to mist the lamb butts every 2 to 3 hours. slow cook the lamb butt's until the internal temperature reaches 205 degrees. then remove them from the cooker and place them in a aluminum pan and cover with foil. let stand 45 minutes to allow the juices to distribute and the meat to cool a bit. using a fork begin pulling the meat apart. it should pull apart very easy. pick out and toss any pieces of fat you wish not to consume. most the fat should be mostly cooked down at this point.
  • 8 serve with a pan of beans and you might want to put them in the smoker while the butt's are cooling. a pan of honey cornbread is another great side. if you like your pulled lamb memphis style, well pile on some slaw on top of that mountain of lamb then add the top bun!
