Lori's Salisbury Beef

Ingredients

- 3 lbs chuck roast (cubed)
- seasoned flour (as needed)
- 1/4 cup olive oil
- 1/4 cup butter
- 1/2 cup onion (minced)
- 3/4 lb mushroom (sliced thin)
- 1 1/2 cups beef broth (or good quality homemade strong chicken broth)
- 3 tablespoons tomato paste
- 2 teaspoons poultry seasoning
- 1/2 teaspoon dry mustard
- 1/2 teaspoon paprika
Recipe
- 1 heat oven 350.
- 2 dredge beef in flour to coat. shake off excess.
- 3 heat oil and butter in a dutch oven.
- 4 brown beef in batches, setting all aside.
- 5 to pan add onion. saute 2 minutes.
- 6 add mushrooms. saute 5 minutes.
- 7 return beef and accumulated juices.
- 8 combine the broth, paste, seasoning, mustard and paprika. stir into meat.
- 9 cover. bake 2 hours, stirring often and added more broth if needed.
