Lori's Salisbury Beef

Ingredients

  • Servings: 4
  • 3 lbs chuck roast (cubed)
  • seasoned flour (as needed)
  • 1/4 cup olive oil
  • 1/4 cup butter
  • 1/2 cup onion (minced)
  • 3/4 lb mushroom (sliced thin)
  • 1 1/2 cups beef broth (or good quality homemade strong chicken broth)
  • 3 tablespoons tomato paste
  • 2 teaspoons poultry seasoning
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon paprika

Recipe

  • 1 heat oven 350.
  • 2 dredge beef in flour to coat. shake off excess.
  • 3 heat oil and butter in a dutch oven.
  • 4 brown beef in batches, setting all aside.
  • 5 to pan add onion. saute 2 minutes.
  • 6 add mushrooms. saute 5 minutes.
  • 7 return beef and accumulated juices.
  • 8 combine the broth, paste, seasoning, mustard and paprika. stir into meat.
  • 9 cover. bake 2 hours, stirring often and added more broth if needed.
