Hoppin' John, My Way

Total Time: 2 hrs 15 mins Preparation Time: 15 mins Cook Time: 2 hrs

Ingredients

  • Servings: 6
  • 1 lb black-eyed peas, frozen
  • 1 yellow sweet onion, diced fine
  • 2 garlic cloves, minced
  • 1/4 cup canola oil
  • 4 slices bacon, diced
  • 2 (14 1/2 ounce) cans diced tomatoes
  • 2 cups chicken stock
  • 1 dried bay leaf
  • 1/4 teaspoon sugar
  • 1 teaspoon seasoning salt, such as creole salt
  • 1 teaspoon red pepper sauce, such as tabasco
  • 1 cup rice, prepared

Recipe

  • 1 in a dutch oven or stock pot, heat oil on medium high heat.
  • 2 add onion and creole salt.
  • 3 add bacon pieces.
  • 4 cook till almost cooked, then add garlic.
  • 5 when vegetables are soft and bacon is fully cooked, pour in 2 cans tomatoes (with juice) and stir.
  • 6 add frozen black eyed peas, stir.
  • 7 add sugar, bay leaf, pepper sauce, and chicken stock.
  • 8 cover and simmer for 1 hour, at least, then turn down to warm for another hour.
  • 9 stir in rice, remove bay leaf and serve with corn bread!
