Ingredients

- 1 lb black-eyed peas, frozen
- 1 yellow sweet onion, diced fine
- 2 garlic cloves, minced
- 1/4 cup canola oil
- 4 slices bacon, diced
- 2 (14 1/2 ounce) cans diced tomatoes
- 2 cups chicken stock
- 1 dried bay leaf
- 1/4 teaspoon sugar
- 1 teaspoon seasoning salt, such as creole salt
- 1 teaspoon red pepper sauce, such as tabasco
- 1 cup rice, prepared
Recipe
- 1 in a dutch oven or stock pot, heat oil on medium high heat.
- 2 add onion and creole salt.
- 3 add bacon pieces.
- 4 cook till almost cooked, then add garlic.
- 5 when vegetables are soft and bacon is fully cooked, pour in 2 cans tomatoes (with juice) and stir.
- 6 add frozen black eyed peas, stir.
- 7 add sugar, bay leaf, pepper sauce, and chicken stock.
- 8 cover and simmer for 1 hour, at least, then turn down to warm for another hour.
- 9 stir in rice, remove bay leaf and serve with corn bread!
