Hot Dog Soup

Ingredients

  • Servings: 4
  • 8 hot dogs, each cut in 6 pieces
  • 2 lbs potatoes, peeled and cut in 2-inch pieces
  • 1 tablespoon butter
  • 1 garlic clove (to taste)
  • 3 cups plain tomato puree
  • 3 cups water
  • 1 teaspoon salt
  • black pepper
  • 1 teaspoon italian seasoning
  • 1/2 teaspoon sugar
  • 8 ounces green beans, cut into thirds
  • 2 green zucchini, halved and cut into triangles
  • 1 red bell pepper, trimmed and membrane removed, cut into 2-inch strips, then into triangles

Recipe

  • 1 melt butter in a dutch oven and add hot dogs, sauteing them over medium heat to give color and bring out the flavor. add the garlic, then the tomato puree.
  • 2 to this mixture add: water, salt, pepper, italian seasoning and sugar. bring to a boil.
  • 3 add the potatoes and simmer 5 minutes.
