Green Soup

Ingredients

  • Servings: 4
  • 2 cups vegetable stock
  • 3 spring onions, trimmed and sliced
  • 2 teaspoons garlic, minced
  • 8 ounces peas, frozen
  • 1/2 cup celery, chopped
  • 4 1/2 ounces spinach, roughly chopped
  • 1/2 cup cream

Recipe

  • 1 place the stock, spring onions and garlic in a pan. add salt and pepper to this, cover and bring this to boil.
  • 2 boil until the onions are soft, then add the peas and celery and continue to boil on high heat. once the mixture comes to boil remove the lid.
  • 3 after a minute, add spinach and further boil for 1-minute until the leaves are just tender.
  • 4 next add the cream and blend immediately. add the seasoning according to your choice and serve.
