Ingredients

- 2 cups vegetable stock
- 3 spring onions, trimmed and sliced
- 2 teaspoons garlic, minced
- 8 ounces peas, frozen
- 1/2 cup celery, chopped
- 4 1/2 ounces spinach, roughly chopped
- 1/2 cup cream
Recipe
- 1 place the stock, spring onions and garlic in a pan. add salt and pepper to this, cover and bring this to boil.
- 2 boil until the onions are soft, then add the peas and celery and continue to boil on high heat. once the mixture comes to boil remove the lid.
- 3 after a minute, add spinach and further boil for 1-minute until the leaves are just tender.
- 4 next add the cream and blend immediately. add the seasoning according to your choice and serve.
