Creamy Shallot Vinaigrette

Total Time: 5 mins Preparation Time: 5 mins

Ingredients

  • 1/3 cup extra virgin olive oil
  • 3 tablespoons wine vinegar
  • 3 tablespoons sour cream or 3 tablespoons yogurt or 3 tablespoons mayonnaise
  • 1 teaspoon dijon mustard
  • 1 small shallot, cut into chunks
  • salt
  • fresh ground pepper

Recipe

  • 1 combine all ingredients (except shallot) into a small food processor or blender and turn on machine. blend for 30 seconds, taste and add vinegar if needed.
  • 2 add shallot and turn machine on and off a few times until it is minced into dressing. taste and adjust seasoning.
