Creamy Shallot Vinaigrette

Ingredients
- 1/3 cup extra virgin olive oil
- 3 tablespoons wine vinegar
- 3 tablespoons sour cream or 3 tablespoons yogurt or 3 tablespoons mayonnaise
- 1 teaspoon dijon mustard
- 1 small shallot, cut into chunks
- salt
- fresh ground pepper
Recipe
- 1 combine all ingredients (except shallot) into a small food processor or blender and turn on machine. blend for 30 seconds, taste and add vinegar if needed.
- 2 add shallot and turn machine on and off a few times until it is minced into dressing. taste and adjust seasoning.
