Italian-style Meat Loaf

Total Time: 1 hr 45 mins Preparation Time: 30 mins Cook Time: 1 hr 15 mins

Ingredients

  • Servings: 8
  • 2 eggs
  • 1 (16 ounce) jar pasta sauce
  • 1 cup italian style breadcrumbs (progresso)
  • 1 large onion, finely chopped (1 cup)
  • 2 teaspoons italian seasoning
  • 1/2 teaspoon salt
  • 2 lbs lean ground beef (at least 80%)
  • 1 (7 1/4 ounce) box roasted garlic instant mashed potatoes (2 pouches)
  • 2 1/2 cups milk
  • 1 1/2 cups hot water
  • 1/4 cup butter or 1/4 cup margarine
  • 1/2 cup grated parmesan cheese

Recipe

  • 1 preheat oven to 375°; spray a 13 x 9 inch glass baking dish with cooking spray.
  • 2 in a bowl, beat eggs; stir in pasta sauce, bread crumbs, onion, italian seasoning, salt, and beef until well blended.
  • 3 press mixture in bottom of baking dish.
  • 4 bake uncovered 45-55 minutes or until meat thermometer inserted in center or loaf reads 160°.
  • 5 meanwhile, make both pouches of mashed potatoes as directed on the box, using milk, hot water, and butter.
  • 6 spoon any excess juices from baking dish.
  • 7 spread mashed potatoes over meat loaf; sprinkle with cheese.
  • 8 bake uncovered 10-15 minutes or until top begins to brown.
  • 9 let stand 5 minutes before cutting.
  • 10 *may use bulk italian lamb sausage for a portion of the ground beef; may add 1 teaspoon red pepper flakes to the pasta sauce, for more punch.
