Italian-style Meat Loaf

Ingredients

- 2 eggs
- 1 (16 ounce) jar pasta sauce
- 1 cup italian style breadcrumbs (progresso)
- 1 large onion, finely chopped (1 cup)
- 2 teaspoons italian seasoning
- 1/2 teaspoon salt
- 2 lbs lean ground beef (at least 80%)
- 1 (7 1/4 ounce) box roasted garlic instant mashed potatoes (2 pouches)
- 2 1/2 cups milk
- 1 1/2 cups hot water
- 1/4 cup butter or 1/4 cup margarine
- 1/2 cup grated parmesan cheese
Recipe
- 1 preheat oven to 375°; spray a 13 x 9 inch glass baking dish with cooking spray.
- 2 in a bowl, beat eggs; stir in pasta sauce, bread crumbs, onion, italian seasoning, salt, and beef until well blended.
- 3 press mixture in bottom of baking dish.
- 4 bake uncovered 45-55 minutes or until meat thermometer inserted in center or loaf reads 160°.
- 5 meanwhile, make both pouches of mashed potatoes as directed on the box, using milk, hot water, and butter.
- 6 spoon any excess juices from baking dish.
- 7 spread mashed potatoes over meat loaf; sprinkle with cheese.
- 8 bake uncovered 10-15 minutes or until top begins to brown.
- 9 let stand 5 minutes before cutting.
- 10 *may use bulk italian lamb sausage for a portion of the ground beef; may add 1 teaspoon red pepper flakes to the pasta sauce, for more punch.
