James Beard's Sardine Paste

Ingredients

- 1 lb cream cheese
- 1 large onion, grated
- 1/2 cup parsley, chopped
- 1/2 cup chives, chopped
- 2 tablespoons juice
- lemon juice
- 3 (5 ounce) cans boneless skinless sardines in oil
- salt and pepper
- paprika
Recipe
- 1 mash the cream cheese and cream it throughly.
- 2 beat in the onion, parsley, chives and lemon juice.
- 3 mash the sardines and beat into the cheese mixture.
- 4 correct the seasoning.
- 5 sprinkle with paprika.
- 6 plate with additional parsley and lemon wedges.
- 7 serve on crackers, biscuits, or bread.
