James Beard's Sardine Paste

Ingredients

  • Servings: 10
  • 1 lb cream cheese
  • 1 large onion, grated
  • 1/2 cup parsley, chopped
  • 1/2 cup chives, chopped
  • 2 tablespoons juice
  • lemon juice
  • 3 (5 ounce) cans boneless skinless sardines in oil
  • salt and pepper
  • paprika

Recipe

  • 1 mash the cream cheese and cream it throughly.
  • 2 beat in the onion, parsley, chives and lemon juice.
  • 3 mash the sardines and beat into the cheese mixture.
  • 4 correct the seasoning.
  • 5 sprinkle with paprika.
  • 6 plate with additional parsley and lemon wedges.
  • 7 serve on crackers, biscuits, or bread.
