Easy Cheesy Mexican Casserole

Ingredients
- Servings: 8
- 1 lb lean ground beef
- 2 cups thick & chunky salsa
- 1 (15 ounce) can black beans
- 1/4 cup fat-free italian salad dressing, zesty
- 2 tablespoons taco seasoning mix
- 1 cup fat free sour cream
- 1 (8 ounce) package 2% mexican cheese blend
- 4 flour tortillas, burrito size
Recipe
- 1 preheat oven to 400 degrees.
- 2 brown meat and drain. (since i buy lean meat, i like to add a tbsp of salsa while i'm browning to give it a little more juice.).
- 3 drain and rinse beans.
- 4 mix browned meat, salsa, seasoning, and beans.
- 5 place 2 flour tortillas on the bottom of a glass casserole dish. (the edges will go up the sides slightly).
- 6 top the tortillas with half of each of the meat mixture, cheese, and sour cream.
- 7 place the other 2 tortillas on top and repeat the layer.
- 8 cover with foil.
- 9 bake for 30 minutes covered.
- 10 remove foil cover.
- 11 bake 10 more minutes uncovered or until cheese is melted.
