Janeen's Jarlsberg Squares

Ingredients

  • Servings: 4
  • 1 tablespoon butter
  • 1/2 cup chopped mushroom
  • 4 eggs, lightly beaten
  • 4 cups shredded jarlsberg cheese (1 1/2 lbs)
  • 1/4 cup snipped chives
  • 1/2 teaspoon pepper
  • 1/2 teaspoon grated nutmeg
  • 1 teaspoon chopped fresh tarragon (or 1/2 tsp dried)

Recipe

  • 1 preheat oven to 350°.
  • 2 grease and flour an 8" square cake pan to make thick squares - or - a 13" x 9" cake pan to make thin squares.
  • 3 melt butter in a saute pan over medium-high heat. add mushrooms and saute until all the liquid evaporates. remove from heat. set aside to cool.
  • 4 in a large bowl, combine eggs, cheese and chives. stir in the cooled mushrooms, add the pepper, nutmeg and tarragon. mix well.
  • 5 taste and correct the seasonings.
  • 6 spread mixture evenly in prepared pan. bake until knife inserted in the centre comes out clean, about 25 minutes. let cool in the pan on a rack for 5-7 minutes before cutting into squares to serve.
