Janeen's Jarlsberg Squares

Ingredients

- 1 tablespoon butter
- 1/2 cup chopped mushroom
- 4 eggs, lightly beaten
- 4 cups shredded jarlsberg cheese (1 1/2 lbs)
- 1/4 cup snipped chives
- 1/2 teaspoon pepper
- 1/2 teaspoon grated nutmeg
- 1 teaspoon chopped fresh tarragon (or 1/2 tsp dried)
Recipe
- 1 preheat oven to 350°.
- 2 grease and flour an 8" square cake pan to make thick squares - or - a 13" x 9" cake pan to make thin squares.
- 3 melt butter in a saute pan over medium-high heat. add mushrooms and saute until all the liquid evaporates. remove from heat. set aside to cool.
- 4 in a large bowl, combine eggs, cheese and chives. stir in the cooled mushrooms, add the pepper, nutmeg and tarragon. mix well.
- 5 taste and correct the seasonings.
- 6 spread mixture evenly in prepared pan. bake until knife inserted in the centre comes out clean, about 25 minutes. let cool in the pan on a rack for 5-7 minutes before cutting into squares to serve.
