Crock Pot Pulled-lamb Fajitas

Total Time: 8 hrs 10 mins Preparation Time: 10 mins Cook Time: 8 hrs

Ingredients

  • Servings: 8
  • 2 1/2 lbs boneless lamb loin roast
  • 1 medium onion, thinly sliced
  • 2 cups barbecue sauce
  • 3/4 cup salsa
  • 3 tablespoons chili powder
  • 1 tablespoon mexican seasoning
  • 9 flour tortillas

Recipe

  • 1 trim off excess fat from lamb.
  • 2 place lamb in slow cooker and place onions on top of roast.
  • 3 mix remaining ingredients together except tortillas; pour over lamb.
  • 4 cover and cook on low heat setting 8 to 10 hours or until lamb is very tender.
  • 5 remove lamb; place on large platter or cutting board and pull lamb apart.
  • 6 place lamb in serving bowl and pour sauce on top.
  • 7 spoon filling into tortillas and roll up.
