Crock Pot Pulled-lamb Fajitas

Ingredients

- 2 1/2 lbs boneless lamb loin roast
- 1 medium onion, thinly sliced
- 2 cups barbecue sauce
- 3/4 cup salsa
- 3 tablespoons chili powder
- 1 tablespoon mexican seasoning
- 9 flour tortillas
Recipe
- 1 trim off excess fat from lamb.
- 2 place lamb in slow cooker and place onions on top of roast.
- 3 mix remaining ingredients together except tortillas; pour over lamb.
- 4 cover and cook on low heat setting 8 to 10 hours or until lamb is very tender.
- 5 remove lamb; place on large platter or cutting board and pull lamb apart.
- 6 place lamb in serving bowl and pour sauce on top.
- 7 spoon filling into tortillas and roll up.
