Italian Peas Parmesan (piselli Alla Parmigiana)

Ingredients

  • Servings: 4
  • 2 lbs green peas
  • 1/4 cup olive oil
  • 6 scallions, minced
  • 1/4 cup fresh mint
  • 1/4 cup water
  • salt & pepper
  • grated parmesan cheese

Recipe

  • 1 saute onion in hot oil until brown.
  • 2 add water, peas, mint, and seasonings.
  • 3 cover tightly and steam till peas are tender 7-8 minutes for young peas, 15 for large peas.
  • 4 serve hot sprinkle with parmesan cheese.
