Jamie's Roasted Sweet Garlic Soup

Ingredients

  • Servings: 1
  • 10 -12 cloves garlic
  • 450 g blanched almonds
  • 140 g sourdough bread, crusts removed (4-5 slices)
  • 225 ml low-fat milk
  • 450 ml chicken stock or 450 ml water
  • sherry wine vinegar
  • extra virgin olive oil
  • sea salt
  • fresh ground black pepper
  • 1 bunch green grape, quartered
  • 3 -5 sprigs fresh marjoram, chopped

Recipe

  • 1 preheat the oven to 200 c or 400 degrees f.
  • 2 bake the garlic cloves for about 20 minutes or until soft.
  • 3 break the bread into small pieces and soak in the milk.
  • 4 using a food processor, blend the almonds until fine.
  • 5 throw in the soaked bread and the soft inside of the roasted garlic.
  • 6 add a little chicken stock or water and blend.
  • 7 when you have a fine purée, gradually add in enough stock or water to make a nice, thick, soup.
  • 8 finish by seasoning with salt and pepper and a good drizzle of sherry vinegar and olive oil.
  • 9 garnish with some green grapes and chopped marjoram on top.
