Jamie's Roasted Sweet Garlic Soup

Ingredients

- 10 -12 cloves garlic
- 450 g blanched almonds
- 140 g sourdough bread, crusts removed (4-5 slices)
- 225 ml low-fat milk
- 450 ml chicken stock or 450 ml water
- sherry wine vinegar
- extra virgin olive oil
- sea salt
- fresh ground black pepper
- 1 bunch green grape, quartered
- 3 -5 sprigs fresh marjoram, chopped
Recipe
- 1 preheat the oven to 200 c or 400 degrees f.
- 2 bake the garlic cloves for about 20 minutes or until soft.
- 3 break the bread into small pieces and soak in the milk.
- 4 using a food processor, blend the almonds until fine.
- 5 throw in the soaked bread and the soft inside of the roasted garlic.
- 6 add a little chicken stock or water and blend.
- 7 when you have a fine purée, gradually add in enough stock or water to make a nice, thick, soup.
- 8 finish by seasoning with salt and pepper and a good drizzle of sherry vinegar and olive oil.
- 9 garnish with some green grapes and chopped marjoram on top.
