Greek Yogurt Breakfast Quiche

Ingredients
- 8 slices lean turkey bacon
- 4 whole eggs
- 4 egg whites
- 1 teaspoon mccormick italian seasoning
- 1/4 cup nonfat voskos greek yogurt
- 1/3 cup thinly sliced yellow onion
- 3 small russet potatoes
- 1/2 teaspoon ground sea salt
- 1/4 teaspoon ground black pepper
Recipe
- 1 prick and microwave potatoes for 5 minutes or until done.
- 2 cook bacon in large pan until crispy. once removed blot bacon with paper towels to remove excess grease.
- 3 grill onions in bacon grease until browned. peel potatoes, slice, and add to pan with onions.
- 4 cut turkey bacon into thin slices and add to pan.
- 5 whisk remaining ingredients in a bowl. pour over turkey, potatoes, and onions. reduce heat to medium-low and cover. let set for up to 10 minutes.
