Greek Yogurt Breakfast Quiche

Total Time: 20 mins Preparation Time: 15 mins Cook Time: 5 mins

Ingredients

  • 8 slices lean turkey bacon
  • 4 whole eggs
  • 4 egg whites
  • 1 teaspoon mccormick italian seasoning
  • 1/4 cup nonfat voskos greek yogurt
  • 1/3 cup thinly sliced yellow onion
  • 3 small russet potatoes
  • 1/2 teaspoon ground sea salt
  • 1/4 teaspoon ground black pepper

Recipe

  • 1 prick and microwave potatoes for 5 minutes or until done.
  • 2 cook bacon in large pan until crispy. once removed blot bacon with paper towels to remove excess grease.
  • 3 grill onions in bacon grease until browned. peel potatoes, slice, and add to pan with onions.
  • 4 cut turkey bacon into thin slices and add to pan.
  • 5 whisk remaining ingredients in a bowl. pour over turkey, potatoes, and onions. reduce heat to medium-low and cover. let set for up to 10 minutes.
