Greek Salad

Total Time: 10 mins Preparation Time: 10 mins

Ingredients

  • 2 large tomatoes, cut into chunks
  • 1 large cucumber, cut into chunks
  • 2 stalks green onions, diced
  • 1 tablespoon fresh cilantro, finely chopped
  • 2 tablespoons low-fat feta cheese, crumbled
  • 2 tablespoons pitted black olives, sliced
  • 1 garlic clove, finely chopped
  • 1 tablespoon lemon juice

Recipe

  • 1 1. place the first seven ingredients in a large salad bowl and toss gently.
  • 2 2. drizzle the lemon juice and olive oil over the salad.
  • 3 3. sprinkle the oregano, sea salt and black pepper on top.
  • 4 4. gently stir all items again to ensure seasoning is distributed evenly and serve.
  • 5 (optional: lay over a bed of romaine).
