Italian Eggs

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 3
  • 2 tablespoons butter
  • 1 tablespoon onion, chopped
  • 1 1/2 cups canned tomatoes, drained
  • 1/2 cup cheese, grated
  • 3 egg yolks, beaten
  • salt
  • pepper
  • parsley, to garnish

Recipe

  • 1 melt butter in frypan, cook onions until soft, then add tomatoes and cheese.
  • 2 stir until well heated.
  • 3 add beaten egg yolks and seasoning.
  • 4 cook this mixture until it becomes creamy, stirring all the time.
  • 5 serve on buttered toast, and sprinkle parsley on top.
