Low Fat Chimichangas

Ingredients
- 1 (16 ounce) can fat-free refried beans
- 1 cup low fat shredded cheddar cheese
- 1 tablespoon taco seasoning (old el paso is best)
- tortilla
- pam cooking spray
- garnishes of choice lettuce, salsa, fat free sour cream
Recipe
- 1 preheat oven to 425 degrees.
- 2 mix beans, cheese, and taco seasoning thoroughly.
- 3 microwave the tortillas for a short period to soften.
- 4 place a large spoonful of mixture in center of tortilla.
- 5 fold top down and bottom up, then fold sides over, into the shape of a chimichanga.
- 6 place toothpicks into chimichangas to keep tortillas closed.
- 7 spray both sides of chimichangas with pam cooking spray (generic cooking spray works, but does not produce as crisp a result).
- 8 place chimichangas on a nonstick cookie sheet or a sheet lined with foil.
- 9 place chimichangas in the oven for 8 minutes.
- 10 remove toothpicks and turn chimichangas to other side; bake for another 5 minutes.
- 11 adjust cooking time as needed to obtain a crispy outside.
- 12 garnish as desired.
