Fried Green Tomatoes

Ingredients

- 4 medium green tomatoes
- 1/2 cup cornmeal
- 1/2 cup parmesan cheese (grated)
- 3 tablespoons flour
- 1/2 teaspoon garlic salt
- 1/2 teaspoon dried oregano
- 1/2 teaspoon ground ginger
- 1/8 teaspoon crushed red pepper flakes
- 2 eggs
- 1/4-1/2 cup olive oil
- salt
Recipe
- 1 cut tomatoes into 1/4" slices.
- 2 sprinkle both sides with salt and let stand for 10 minutes.
- 3 combine cornmeal, cheese, flour and seasonings in a shallow bowl.
- 4 in another bowl, beat the eggs.
- 5 heat oil in a large frying pan.
- 6 pat tomatoes dry.
- 7 dip tomatoes in egg mixture and roll in cronmeal mixture.
- 8 fry tomatoes a few at a time until golden brown. about 3 to 4 minutes a side.
- 9 drain on a paper towel.
