Jerked Lamb Loin

Total Time: 25 hrs 30 mins Preparation Time: 24 hrs Cook Time: 1 hr 30 mins

Ingredients

  • Servings: 100
  • 2 lbs green onions
  • 1/4 ounce nutmeg
  • 4 ounces ginger
  • 5 lbs yellow onions
  • 2 ounces thyme
  • 6 ounces honey
  • 6 ounces lime juice
  • 1/4 ounce bay leaf
  • 40 lbs lamb loin
  • 12 ounces jamaican jerk spice
  • 1/2 ounce ground mace
  • salt
  • pepper
  • 4 ounces soy sauce
  • 1/2 ounce worcestershire sauce
  • 1/4 quart vegetable oil

Recipe

  • 1 put all the ingredients together and blend.
  • 2 immerse the lamb loin in the marinade until fully coated. marinate the lamb one day in advance.
  • 3 prepare a ribbed grill with oven rack and turn oven to 450°f brush the rack with oil to prevent sticking. place the lamb on the rack fat side down.
  • 4 cover with foil and cook for 1.5 hrs browning and smoking the lamb.
  • 5 reduce the remaining marination by adding ketchup, green onion and brown chicken stock until slightly thickened. adjust seasoning if needed.
  • 6 after 1 hr turn the lamb to fat side up and brush with marination reduction.
  • 7 repeatedly brush lamb with jerk marinade reduction on each turn to keep it moist.
