Jerk Spiced Shrimp With Spinach

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • 12 ounces large shrimp, deveined and peeled
  • 1 1/2 teaspoons jerk seasoning
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 8 cups spinach, fresh, torn

Recipe

  • 1 rinse shrimp and pat dry with paper towels.
  • 2 place shrimp in small bowl and sprinkle with jerk seasoning, toss to coat.
  • 3 in large skillet, heat 1 tbsp olive oil over medium-high heat.
  • 4 add garlic and cook for 15 to 30 seconds.
  • 5 add half the spinach. cook and stir about 1 minute or until spinach is just wilted.
  • 6 transfer to serving platter.
  • 7 repeat with remaining spinach. cover and keep warm.
  • 8 add remaining 1 tbsp oil to skillet.
  • 9 add shrimp, cook and stir for 2 to 3 minutes, until shrimp turn opaque.
  • 10 serve shrimp over wilted spinach.
