Incredibly Creamy Clam Chowder

Ingredients
- Servings: 4
- 1 tablespoon butter
- 1 onion, chopped
- 1 stalk celery, chopped
- 1 medium cauliflower, cut in chunks
- 1 cup oats
- 1 teaspoon oregano
- 1 pinch cayenne (to taste)
- 6 cups chicken bouillon
- 2 (6 1/2 ounce) cans minced clams, undrained
- salt & pepper, to taste
Recipe
- 1 melt butter in pot, brown onion and celery.
- 2 add cauliflower, oats, oregano, cayenne, bouillon and salt and pepper.
- 3 bring to a boil.
- 4 reduce heat and simmer for 60 minutes, uncovered, stirring occasionally.
- 5 using a blender (or hand blender) puree until smooth.
- 6 stir in chopped clams.
- 7 warm, do not overcook or clams will get rubbery.
- 8 adjust seasoning to taste.
