Incredibly Creamy Clam Chowder

Ingredients

  • Servings: 4
  • 1 tablespoon butter
  • 1 onion, chopped
  • 1 stalk celery, chopped
  • 1 medium cauliflower, cut in chunks
  • 1 cup oats
  • 1 teaspoon oregano
  • 1 pinch cayenne (to taste)
  • 6 cups chicken bouillon
  • 2 (6 1/2 ounce) cans minced clams, undrained
  • salt & pepper, to taste

Recipe

  • 1 melt butter in pot, brown onion and celery.
  • 2 add cauliflower, oats, oregano, cayenne, bouillon and salt and pepper.
  • 3 bring to a boil.
  • 4 reduce heat and simmer for 60 minutes, uncovered, stirring occasionally.
  • 5 using a blender (or hand blender) puree until smooth.
  • 6 stir in chopped clams.
  • 7 warm, do not overcook or clams will get rubbery.
  • 8 adjust seasoning to taste.
