Healthier Mexican Casserole

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 10
  • 1 lb ground turkey
  • 1 1/4 ounces taco seasoning (or if you like to make your own)
  • 3/4 cup water
  • 1 (15 ounce) can black beans
  • 1 (6 ounce) can tomato paste
  • 1 (14 ounce) can enchilada sauce
  • 1 (4 ounce) can green chilies, chopped
  • 3/4 cup mexican blend cheese (or whatever you like)
  • 10 corn tortillas, cut in 4 quarters

Recipe

  • 1 preheat oven to 450 degrees.
  • 2 brown grown turkey
  • 3 add taco seasoning and water and simmer uncovered for about ten minutes.
  • 4 puree black beans with green chilies and tomato paste.
  • 5 layer in a 9 by 13 inch casserole dish with enough enchilada sauce to cover bottom, then tortillas, 1/3 of bean mixture, 1/3 of taco meat, 1/3 of cheese, repeat and top with the rest of enchilada sauce
  • 6 bake for about 30 minutes.
