Healthier Mexican Casserole

Ingredients

- 1 lb ground turkey
- 1 1/4 ounces taco seasoning (or if you like to make your own)
- 3/4 cup water
- 1 (15 ounce) can black beans
- 1 (6 ounce) can tomato paste
- 1 (14 ounce) can enchilada sauce
- 1 (4 ounce) can green chilies, chopped
- 3/4 cup mexican blend cheese (or whatever you like)
- 10 corn tortillas, cut in 4 quarters
Recipe
- 1 preheat oven to 450 degrees.
- 2 brown grown turkey
- 3 add taco seasoning and water and simmer uncovered for about ten minutes.
- 4 puree black beans with green chilies and tomato paste.
- 5 layer in a 9 by 13 inch casserole dish with enough enchilada sauce to cover bottom, then tortillas, 1/3 of bean mixture, 1/3 of taco meat, 1/3 of cheese, repeat and top with the rest of enchilada sauce
- 6 bake for about 30 minutes.
