Fresh Mozzarella Bruschetta

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • Servings: 32
  • 1 loaf french baguette (or other french bread with a small diameter)
  • 2 tablespoons olive oil
  • 2 cups fresh tomatoes, finely chopped, seeds and pulp removed
  • 1/2 teaspoon italian seasoning
  • 2 garlic cloves, crushed
  • 2 cups fresh mozzarella cheese, shredded
  • salt (optional)

Recipe

  • 1 preheat oven to 425 degreesf.
  • 2 slice french bread or baguette into 1/2-inch slices.
  • 3 brush both sides lightly with 2 t olive oil.
  • 4 place on baking sheet.
  • 5 sprinkle lightly with salt, if desired.
  • 6 combine chopped tomatoes, italian seasoning and crushed garlic.
  • 7 set aside.
  • 8 bake french bread slices in oven for 3 minutes.
  • 9 turn each slice over and bake an additional 2 minutes.
  • 10 remove from oven.
  • 11 spread each slice with a tablespoon of the tomato mixture.
  • 12 sprinkle with mozzarella cheese.
  • 13 return to oven for 3 minutes or until cheese is melted.
  • 14 serve immediately.
