Freekah Lamb Soup

Total Time: 45 mins Preparation Time: 10 mins Cook Time: 35 mins

Ingredients

  • Servings: 4
  • 1 cup raw green wheat (freekah; cracked grain or wholegrain)
  • 4 tablespoons olive oil
  • 1 onion, finely chopped
  • 150 g loin lamb, 1 cm cubes
  • 1 1/2 teaspoons harissa
  • 1 1/2 liters chicken stock
  • 2 cups baby spinach leaves, tightly packed
  • 1/2 cup cilantro, chopped
  • 1 lemon, juice of
  • 1 tomato, diced
  • salt and pepper, to taste

Recipe

  • 1 saute onions and lamb in the oil until golden brown.
  • 2 add harissa.
  • 3 add freekah and coat the grains well.
  • 4 slowly add the chicken stock and simmer until the grains are tender[about 20 min].
  • 5 when ready to serve add the tomato, lemon juice, spinach, cilantro and seasonings.
  • 6 simmer for 5 minutes and serve.
  • 7 garnish with fresh coriander.
