Budget Rice-a-roni Meatballs

Total Time: 47 mins Preparation Time: 15 mins Cook Time: 32 mins

Ingredients

  • 1 (6 7/8 ounce) package beef rice-a-roni
  • 1 lb ground beef
  • 1 egg, beaten
  • 2 1/2 cups boiling water
  • 2 tablespoons cornstarch in 3 tablespoons cold water

Recipe

  • 1 set seasoning mix aside.
  • 2 combine the rice mix and the egg.
  • 3 add the raw beef in a large bowl and mix together with your hands.
  • 4 roll into meatballs (about an inch and a half).
  • 5 in a large skillet, brown the meatballs on all sides.
  • 6 meanwhile, mix the seasoning packet and boiling water.
  • 7 pour over the meatballs and simmer for 30 minutes.
  • 8 pour the cornstarch/water mixture into the skillet and simmer for 2 minutes.
