Beets With Apples In Special Sauce

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 1 (12 ounce) can sliced beets, , drained with liquid reserved
  • 2 teaspoons lemon juice (fresh, if posible)
  • 1/4 cup balsamic vinegar
  • 1/2 teaspoon mrs. dash seasoning mix (or other sodium-free spice)
  • 1 tablespoon brown sugar
  • 1 teaspoon cornstarch
  • 1 tart green apple, peeled and sliced

Recipe

  • 1 in a large skillet over medium heat, combine ¼ cup of the beet liquid, vinegar, lemon juice, salt, brown sugar and cornstarch; mix well.
  • 2 cook, stirring constantly, until thickened and clear.
  • 3 stir in beets and apple.
  • 4 reduce heat to low and gently simmer for 15 minutes.
  • 5 serve warm.
  • 6 freeze leftovers.
