Jersey Omelet

Ingredients
- 4 slices bacon
- 2 tablespoons minced onions, soaked in 2 tblsp. water 5 minutes
- 1 teaspoon shredded parsley
- 1/2 teaspoon seasoning salt
- 4 eggs
- 1/2 cup light cream
- 1 teaspoon seasoning salt
- 1 teaspoon salt
- 1/8 teaspoon black pepper
- 1 cup swiss cheese, grated
- paprika
Recipe
- 1 cut bacon slices in two. fry until partially cooked, but not crisp. remove from pan. saute onion and parsley in drippings until light brown. season with 1/2 teaspoons seasoned salt. spread in 8 inch pie pan. beat eggs slightly with cream. season with 1 teaspoons seasoned salt, 1 teaspoons salt and black pepper.
- 2 pour over onions, sprinkle with cheese. arrange bacon slices on top; sprinkle with paprika. bake in a 350* oven 15 minutes or until eggs are set and cheese is melted.
