Jersey Omelet

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • 4 slices bacon
  • 2 tablespoons minced onions, soaked in 2 tblsp. water 5 minutes
  • 1 teaspoon shredded parsley
  • 1/2 teaspoon seasoning salt
  • 4 eggs
  • 1/2 cup light cream
  • 1 teaspoon seasoning salt
  • 1 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 cup swiss cheese, grated
  • paprika

Recipe

  • 1 cut bacon slices in two. fry until partially cooked, but not crisp. remove from pan. saute onion and parsley in drippings until light brown. season with 1/2 teaspoons seasoned salt. spread in 8 inch pie pan. beat eggs slightly with cream. season with 1 teaspoons seasoned salt, 1 teaspoons salt and black pepper.
  • 2 pour over onions, sprinkle with cheese. arrange bacon slices on top; sprinkle with paprika. bake in a 350* oven 15 minutes or until eggs are set and cheese is melted.
