Indian Mattar Tofu

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • 1 (14 ounce) package firm tofu, cut into small cubes
  • 2 tablespoons fresh ginger, grated or 1 teaspoon ginger, powdered
  • 1 tablespoon fresh garlic, minced
  • 1 medium onion, minced
  • 1 tablespoon garam masala or 1 tablespoon curry powder
  • 1 teaspoon salt
  • 1 teaspoon turmeric
  • 1 teaspoon coriander
  • 1 (14 ounce) can diced tomatoes with juice
  • 2 cups frozen baby peas
  • 1 tablespoon sugar

Recipe

  • 1 combine ginger, cury masala, salt, turmeric, coriander, and sugar in 1/3 cup water.
  • 2 sautee the onion and garlic in a little bit of peanut oil until fragrant. add tomatoes, tofu, peas and mix well.
  • 3 stir in seasoning blend.
  • 4 simmer ten minutes or until tofu and peas are cooked through.
  • 5 serve with basmati or jasmine rice.
