Homemade Sun-dried Tomato Paste

Total Time: 15 mins Preparation Time: 15 mins

Ingredients

  • 1 (28 ounce) jar sun-dried tomatoes packed in oil, drained
  • 10 cloves garlic
  • 1/2-1 cup olive oil
  • salt & freshly ground black pepper

Recipe

  • 1 put the tomatoes in a medium bowl.
  • 2 add some very hot water to cover.
  • 3 stir for a few minutes, then drain.
  • 4 (this softens the tomatoes and gets rid of some of the packing oil).
  • 5 in a food processor, combine the tomatoes, garlic, olive oil and seasonings.
  • 6 puree until smooth.
  • 7 refrigerate for up to 2 weeks.
