Homemade Sun-dried Tomato Paste

Ingredients
- 1 (28 ounce) jar sun-dried tomatoes packed in oil, drained
- 10 cloves garlic
- 1/2-1 cup olive oil
- salt & freshly ground black pepper
Recipe
- 1 put the tomatoes in a medium bowl.
- 2 add some very hot water to cover.
- 3 stir for a few minutes, then drain.
- 4 (this softens the tomatoes and gets rid of some of the packing oil).
- 5 in a food processor, combine the tomatoes, garlic, olive oil and seasonings.
- 6 puree until smooth.
- 7 refrigerate for up to 2 weeks.
