Fruited Rice

Total Time: 2 hrs 7 mins Preparation Time: 7 mins Cook Time: 2 hrs

Ingredients

  • 1/3 cup chopped onion
  • 1 (6 ounce) package long grain and wild rice blend
  • 2 cups chicken broth
  • 1/4 cup dried cranberries
  • 1/4 cup chopped dried apricot
  • 1/2 cup toasted pecans

Recipe

  • 1 spray small frying pan with nonstick cooking spray, and add chopped onions . cook on medium heat for 5 minutes, or until onions begin to brown.
  • 2 place onions,rice mix, chicken broth, dried cranberries, and dried apricots in slow cooker, include the seasonings from the rice package. stir well to dissolve seasonings.
  • 3 cover and cook on high for 2 hours.
  • 4 just before serving sprinkle dish with the 1/2 cup toasted pecans, or other nuts.
