Fruited Rice

Ingredients
- 1/3 cup chopped onion
- 1 (6 ounce) package long grain and wild rice blend
- 2 cups chicken broth
- 1/4 cup dried cranberries
- 1/4 cup chopped dried apricot
- 1/2 cup toasted pecans
Recipe
- 1 spray small frying pan with nonstick cooking spray, and add chopped onions . cook on medium heat for 5 minutes, or until onions begin to brown.
- 2 place onions,rice mix, chicken broth, dried cranberries, and dried apricots in slow cooker, include the seasonings from the rice package. stir well to dissolve seasonings.
- 3 cover and cook on high for 2 hours.
- 4 just before serving sprinkle dish with the 1/2 cup toasted pecans, or other nuts.
