Fiesta Fritters

Ingredients
- 1 (20 ounce) bag simply potatoes® shredded hash browns
- 1 cup corn kernel
- 1 cup black beans, drained and rinsed
- 2 eggs
- 1/4 cup green onion, chopped
- 1/4 cup taco seasoning
- 1/4 cup cornmeal
- kosher salt, to taste
- black pepper, to taste
- 2 -3 cups canola oil (for frying)
- salsa (optional)
Recipe
- 1 in a large bowl, fold together potatoes, corn, black beans, eggs, green onions, taco seasoning, corn meal, salt and pepper until well combined.
- 2 line a baking sheet with aluminum foil.
- 3 form fritter mixture into golf-ball sized fritters and set on lined baking sheet.
- 4 chill fritters in refrigerator for at least 30 minutes.
- 5 in a large skillet or cast-iron pan, heat oil until hot enough for frying, about 375 degrees.
- 6 fry fritters in batches until golden brown and cooked through (about 2 minutes each side), and drain on paper towels.
- 7 serve as a side dish, or with salsa as an appetizer.
