Fiesta Fritters

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 1 (20 ounce) bag simply potatoes® shredded hash browns
  • 1 cup corn kernel
  • 1 cup black beans, drained and rinsed
  • 2 eggs
  • 1/4 cup green onion, chopped
  • 1/4 cup taco seasoning
  • 1/4 cup cornmeal
  • kosher salt, to taste
  • black pepper, to taste
  • 2 -3 cups canola oil (for frying)
  • salsa (optional)

Recipe

  • 1 in a large bowl, fold together potatoes, corn, black beans, eggs, green onions, taco seasoning, corn meal, salt and pepper until well combined.
  • 2 line a baking sheet with aluminum foil.
  • 3 form fritter mixture into golf-ball sized fritters and set on lined baking sheet.
  • 4 chill fritters in refrigerator for at least 30 minutes.
  • 5 in a large skillet or cast-iron pan, heat oil until hot enough for frying, about 375 degrees.
  • 6 fry fritters in batches until golden brown and cooked through (about 2 minutes each side), and drain on paper towels.
  • 7 serve as a side dish, or with salsa as an appetizer.
