Crust-less Crab Quiche

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 2 tablespoons butter
  • 1 small onion, chopped
  • 4 eggs, beaten
  • 1 cup milk
  • 1/4 teaspoon salt
  • 1/2 teaspoon fresh coarse ground black pepper
  • 1 teaspoon old bay seasoning
  • 2 cups good lump crabmeat
  • 1 tablespoon flour
  • 1 cup shredded monterey jack cheese
  • 1/4 teaspoon paprika

Recipe

  • 1 pre heat oven to 350.
  • 2 mix flour and cheese well.
  • 3 press into 9" greased pie plate.
  • 4 cook together onion and butter till tender.
  • 5 spread evenly over cheese mixture.
  • 6 beat together eggs, milk and seasonings.
  • 7 pour over top of onions.
  • 8 sprinkle crab meat evenly over all.
  • 9 dust with paprika.
  • 10 bake 30 min at 350 or until knife inserted in center, comes out clean.
