Crust-less Crab Quiche

Ingredients
- Servings: 4
- 2 tablespoons butter
- 1 small onion, chopped
- 4 eggs, beaten
- 1 cup milk
- 1/4 teaspoon salt
- 1/2 teaspoon fresh coarse ground black pepper
- 1 teaspoon old bay seasoning
- 2 cups good lump crabmeat
- 1 tablespoon flour
- 1 cup shredded monterey jack cheese
- 1/4 teaspoon paprika
Recipe
- 1 pre heat oven to 350.
- 2 mix flour and cheese well.
- 3 press into 9" greased pie plate.
- 4 cook together onion and butter till tender.
- 5 spread evenly over cheese mixture.
- 6 beat together eggs, milk and seasonings.
- 7 pour over top of onions.
- 8 sprinkle crab meat evenly over all.
- 9 dust with paprika.
- 10 bake 30 min at 350 or until knife inserted in center, comes out clean.
