Grannydragon's Cock-a-leekie Soup

Total Time: 50 mins Preparation Time: 15 mins Cook Time: 35 mins

Ingredients

  • Servings: 8
  • 1 1/2 bunches leeks, throughly rinsed and diced
  • 2 onions, peeled and diced
  • 3 stalks celery, diced, leaves included
  • 1/4 lb butter or 1/4 lb chicken fat
  • 4 cups chicken stock
  • 2 lbs red potatoes, with peels on, diced
  • salt and pepper
  • half-and-half (optional)

Recipe

  • 1 throughly rinse leeks to remove inner sandy grit.
  • 2 sautee diced leeks, onions, and celery in butter, in a soup pot, until soft.
  • 3 add homemade chicken stock and potatoes. simmer 35 minutes or less, testing for the tenderness of the potatoes.
  • 4 adjust the seasonings.
  • 5 at this point you could add half and half to thicken. i never do! however,do not boil after the addition of the 1/2 and 1/2.
