Fettuccine With Smoked Salmon, Vodka, And Dill

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 1/4 cup butter
  • 1 1/2 cups whipping cream
  • 2 tablespoons vodka
  • 8 ounces smoked chinook salmon, diced
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons fresh dill, chopped
  • 3/4 lb fettuccine pasta
  • 1/2 cup parmesan cheese, grated

Recipe

  • 1 melt butter gently in a large deep skillet.
  • 2 add cream.
  • 3 bring to a boil.
  • 4 add vodka.
  • 5 reduce heat and cook on low 3-4 minutes until slightly thickened.
  • 6 add smoked salmon, salt, pepper and dill.
  • 7 remove from heat.
  • 8 cook fettuccine in a large pot of boiling salted water until tender.
  • 9 drain noodles well.
  • 10 reheat sauce.
  • 11 place drained noodles in the pan with the hot sauce.
  • 12 toss gently over low heat until sauce coats noodles and is thick and creamy.
  • 13 sprinkle with cheese if desired.
  • 14 taste and adjust seasoning if necessary.
