Holly's Greek Bean Salsa

Total Time: 15 mins Preparation Time: 15 mins

Ingredients

  • 1 (10 3/4 ounce) can black beans
  • 1 (10 3/4 ounce) can corn
  • 1 (10 3/4 ounce) can diced tomatoes (i used flavored)
  • 1/4 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 2 tablespoons all purpose greek seasoning
  • 1 cup minced fresh parsley
  • 1 tablespoon minced garlic (i use it from a jar)
  • 1 cup chopped green onion
  • 1 avocado, cubed (optional)
  • salt
  • pepper
  • serve with lime tortilla chips

Recipe

  • 1 rinse and drain beans/corn/tomatoes together in colander.
  • 2 mix all ingredients together in serving bowl.
  • 3 serve with lime tortilla chips.
