Italian Tofu Spread

Ingredients
- Servings: 20
- 1 lb firm tofu
- 14 1/2 ounces italian-style stewed tomatoes
- 6 ounces tomato paste
- 2 tablespoons graded parmesan cheese (optional for a vegan dish)
- roasted garlic and red pepper spice mix (add to taste, i use about 1 tbsp)
Recipe
- 1 drain the can of tomatoes and blend them in a food processor/blender until smooth.
- 2 drain the tofu and blend with the tomatoes.
- 3 add tomato paste and cheese, blend.
- 4 add seasoning blend 1 tsp at a time to desired taste!
