Crockpot Beans & Country Lamb Ribs

Ingredients

- 1 medium size pkg. dried pinto bean
- 6 -8 cups water
- 4 slices thick slab bacon, cut in pieces
- 5 -6 boneless lamb ribs, cut in thick 1 1/2-inch cubes
- 1 chopped yellow onion
- 1 tablespoon tony catchere's seasoning (or favorite seasoning salt)
- 2 tablespoons salt
- 1 tablespoon pepper
- 1 tablespoon garlic powder
- 1 tablespoon lemon pepper
- 4 tablespoons butter
Recipe
- 1 sort beans to remove all debris or bad beans, and rinse in a strainer with water. add rinsed beans to 6-8 cups of water in the crock pot and cover. allow to sit overnight. use no heat at this time.
- 2 the next morning turn the crockpot heat setting to high, and add all other listed ingredients, mixing well. check beans in 4-5 hrs and mix again. replace lid and continue cooking on high 4-5 hrs more. we eat this over rice, or with cornbread. it's great both ways!
