Italian Peas

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 2
  • 2 tablespoons olive oil
  • 1 small red onion, sliced
  • 15 cherry tomatoes, halved
  • 3 garlic cloves, diced
  • 1 small green chili, sliced
  • 1 teaspoon all purpose seasoning
  • 1/2 teaspoon fresh ground black pepper
  • 1 1/2 cups frozen peas
  • 1/2 teaspoon cayenne pepper
  • 2 tablespoons tomato puree
  • 1 tablespoon capers
  • 10 black olives
  • 10 green olives
  • 1 tablespoon fresh basil leaf, roughly torn

Recipe

  • 1 heat the olive oil in a pan.
  • 2 add the cherry tomatoes, onions, garlic, chilli, all purpose seasoning and black pepper.
  • 3 stir frequently so it doesn't catch, cook until the onions are soft and the cherry tomatoes are falling apart.
  • 4 add the frozen peas and cayenne pepper, continue stirring frequently, cook until the peas are defrosted and nearly cooked.
  • 5 add the tomato puree, capers, and green and black olives.
  • 6 continue stirring frequently, cook until the peas are completely cooked and the all the ingredients are hot.
  • 7 stir in the basil leaves and serve :-).
