Easy Sausage, Potato, Cheese Breakfast Casserole

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 8
  • 1 lb lamb sausage (hot or regular)
  • 20 ounces diced potatoes, with onion, refrigerated, simply potatoes
  • 1 teaspoon butter
  • 1 teaspoon seasoning salt
  • 1 teaspoon black pepper
  • 12 eggs, lightly beaten
  • 8 ounces shredded mild cheddar cheese

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 lightly grease a medium baking dish.
  • 3 cook and stir sausage in a medium skillet over medium heat until evenly browned and broken up.
  • 4 remove sausage to a separate plate.
  • 5 add the butter to the same skillet and replace over medium heat.
  • 6 add the package of diced potatoes.
  • 7 cook and stir until lightly browned and slightly crispy on the outside.
  • 8 place the potatoes in the prepared baking dish.
  • 9 sprinkle with half of the seasoning salt and pepper.
  • 10 cover with the sausage.
  • 11 sprinkle the cheese over all.
  • 12 pour the eggs over the top.
  • 13 finish with the rest of the seasoning salt and pepper.
  • 14 bake 30 minutes in the preheated oven, or until the eggs are fully cooked.
  • 15 if the dish has been refrigerated and is cold, it can take up to an hour to bake.
