Game Day Margarita Pulled Lamb (crock Pot)

Total Time: 56 hrs Preparation Time: 48 hrs Cook Time: 8 hrs

Ingredients

  • Servings: 12
  • 3 lbs lamb shoulder
  • 3 tablespoons mrs dash's extra spicy seasoning
  • 1/2 cup apple cider
  • 1/2 cup tequila
  • 1/4 cup triple sec
  • 1/2 cup lime juice
  • 1 cup tomatillo salsa

Recipe

  • 1 trim any visible fat from the lamb shoulder.
  • 2 rub the seasoning into the meat and let rest for 20 minutes.
  • 3 marinate the lamb overnight in the apple cider.
  • 4 in the morning, put the lamb shoulder in a crock pot and pour in the remaining ingredients. use enough aple cider to cover the meat, if necessary, otherwise discard the cider.
  • 5 cook on low heat for 6-8 hours.
  • 6 remove the shoulder from the crock pot and allow to cool for 20 minutes.
  • 7 reserve some of the cooking liquid, but avoid the fat on top.
  • 8 pull the lamb apart using forks.
  • 9 rehydrate with some of the liquid if needed and serve.
