Fajita Egg Skillet (bob Evans Skillet Copycat?)

Ingredients

  • Servings: 4
  • 1/2-1 lb stew meat
  • fajita seasoning mix (http -- or /mexican.food.com or recipe or fajita-seasoning-mix-28011)
  • 6 eggs
  • 1/2 cup salsa
  • 1/2 cup shredded cheese
  • 1/2 green pepper, chopped
  • 1/2 red pepper, chopped
  • 1/2 onion, chopped

Recipe

  • 1 brown stew meat in pan. add fajita seasoning mixed in a cup of water and simmer for 15 minutes or until sauce thickens. while meat is cooking, start to scramble eggs in a separate pan. as eggs start to set, add salsa, cheese, peppers, and onion. when meat is done, cut into small pieces or shred and add to egg skillet. serve hot.
