Easy Moroccan Vegetarian Stew

Ingredients

  • Servings: 4
  • 1 red onion
  • 1 bell pepper
  • 1 garlic clove
  • 16 ounces chickpeas
  • 16 ounces diced tomatoes
  • 8 ounces corn niblets
  • 1 cup uncooked rice
  • salt and pepper
  • chili flakes

Recipe

  • 1 cook rice according to package directions.
  • 2 saute the onion, pepper, and garlic until soft and slightly brown.
  • 3 dump in your other canned ingredients, and seasonings. *seasonings may be adjusted to personal preference*.
  • 4 simmer.
  • 5 serve. over rice.
