Ingredients
- Servings: 4
- 1 red onion
- 1 bell pepper
- 1 garlic clove
- 16 ounces chickpeas
- 16 ounces diced tomatoes
- 8 ounces corn niblets
- 1 cup uncooked rice
- salt and pepper
- chili flakes
Recipe
- 1 cook rice according to package directions.
- 2 saute the onion, pepper, and garlic until soft and slightly brown.
- 3 dump in your other canned ingredients, and seasonings. *seasonings may be adjusted to personal preference*.
- 4 simmer.
- 5 serve. over rice.
