Hoppin' John With Sausage

Total Time: 25 mins Preparation Time: 25 mins

Ingredients

  • Servings: 8
  • 2 cups cooked brown rice
  • 2 teaspoons olive oil
  • 1 cup chopped onion
  • 1/2 cup celery, sliced
  • 2 teaspoons garlic, minced
  • 1 teaspoon cajun seasoning
  • 12 ounces smoked turkey sausage, chopped
  • 2 cups chicken broth
  • 2 (15 ounce) cans black-eyed peas, rinsed and drained
  • 1 (14 1/2 ounce) can diced tomatoes, undrained
  • 1 teaspoon hot pepper sauce (to taste)
  • 1/2 cup tomato sauce

Recipe

  • 1 while rice is cooking, sautee onion and garlic with cajun seasoning in olive oil.
  • 2 add sausage and brown.
  • 3 add remaining ingredients and bring to boil. reduce to simmer.
  • 4 add rice when done and stir to combine.

Ingredients

  • 1 tablespoon olive oil
  • 1/2 tablespoon unsalted butter
  • 1/4 cup salt lamb, coarsely cubed
  • 1/2 cup onion, chopped
  • 1/4 cup celery, chopped
  • 1/4 cup green pepper, chopped
  • 1 tablespoon garlic, chopped
  • 1 (16 ounce) can black-eyed peas, rinsed and drained
  • 2 cups chicken stock (if you want it soupier, increase the stock)
  • 1 bay leaf
  • 1 teaspoon thyme
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 pinch cayenne (go easy on the salt, the salt lamb seasons for you.)
  • 1/2 cup of uncooked instant rice (i went really easy on the rice, you may prefer a cup.)

Recipe

  • 1 heat oil and butter in dutch oven.
  • 2 sear salt lamb on all sides for four minutes.
  • 3 add the onion, celery, green pepper and garlic and saute for another four to five minutes.
  • 4 add the peas, half the stock, and all seasonings.
  • 5 bring to a boil and simmer with the lid off for thirty to forty minutes, or until reduced to 1/4 cup of liquid.
  • 6 add remaining cup of stock and return to a boil.
  • 7 reduce to a simmer and simmer for another ten minutes.
  • 8 add minute rice, stir and let sit covered until rice becomes the texture you like.
  • 9 serve with hot sauce and some soppin' bread.

Green Pea Salad

Ingredients

  • 4 cups frozen peas, cooked (not mushy, season with salt and pepper or mrs. dash, any flavor you like)
  • 2 celery ribs, sliced
  • 3 green onions, sliced
  • 1/4 cup red bell pepper, chopped
  • 1/2-1 cup thousand island dressing (amount to your preference)
  • 1 tablespoon nutritional yeast flakes
  • salt and pepper
  • 1/4 cup diced red onion
  • 1/2 cup stuffed green olive, sliced
  • 3 eggs, hard boiled and chopped
  • 1 dash garlic powder
  • 1 dash onion powder
  • 1 cup sharp cheddar cheese, grated

Recipe

  • 1 cook peas and cool (make sure they aren't mushy or over-cooked).
  • 2 cook eggs and cool; then peel and chop.
  • 3 drain well.
  • 4 put peas in large bowl.
  • 5 add all of the seasonings and mix gently.
  • 6 add celery and red bell peppers.
  • 7 add eggs and onions.
  • 8 add dressing (as much as you like to use).
  • 9 fold in cheese.
  • 10 chill for at least 30 minutes before serving.

Ham And Asparagus Au Gratin

Ingredients

  • Servings: 4
  • 50 ml butter or 50 ml margarine
  • 50 ml flour
  • 3 ml mustard
  • 1 ml pepper
  • 400 ml milk
  • 250 ml grated old cheddar cheese (100 g)
  • 500 g asparagus (about 16 spears)
  • 8 slices cooked deli ham (about 280 g)
  • 500 ml cooked spinach noodles (100 g uncooked)

Recipe

  • 1 melt butter or margarine.
  • 2 blend in flour and seasonings.
  • 3 gradually add milk.
  • 4 bring to boil, stirring constantly.
  • 5 simmer until smooth and thickened.
  • 6 add cheese and stir until melted.
  • 7 cook asparagus in boiling water until tender-crisp (about 1 min).
  • 8 roll two asparagus spears in each ham slice.
  • 9 place noodles, then ham rolls, in baking dish; cover with sauce.
  • 10 garnish with red pepper slices, if desired. bake, uncovered, 20 min at 180°c
  • 11 makes 4 servings (2 rolls each).

Irish Dublin Prawn Cocktail

Ingredients

  • Servings: 3
  • 1 lb large shrimp or 1 lb prawns
  • 1/2 cup water
  • 1/2 cup vinegar
  • 2 teaspoons seafood seasoning
  • 1 teaspoon salt
  • 1/4 cup catsup
  • 1/4 cup whipping cream
  • 1 1/2 tablespoons prepared horseradish
  • 1/2 teaspoon lemon juice

Recipe

  • 1 wash shrimp under cold running water; drain.
  • 2 combine water, vinegar, seafood seasoning, salt, and garlic in large saucepan; bring to boil. add shrimp; stir well. return to boil; cover. reduce heat to low; cook approximately 10 minutes or until shrimp are pink and firm. drain; rinse in cold water. peel and devein shrimp, leaving last joint of tail intact.
  • 3 arrange shrimp on bed of bibb lettuce or on bed of crushed ice. serve with dublin cocktail sauce. makes 3 to 4 servings.
  • 4 for the cocktail sauce, combine all ingredients; mix well. chill until serving time.

  • 1 large ham hock
  • 1 lb smoked sausage
  • 1 cup onion, chopped
  • 1/2 cup celery, chopped

  • 1 tablespoon chopped garlic
  • 1 lb black-eyed peas, soaked overnight and rinsed
  • 1 quart chicken stock
  • 1 bay leaf
  • 1 teaspoon dry thyme leaves
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 3 tablespoons finely chopped green onions
  • 3 cups steamed rice

Recipe

  • 1 heat oil in large soup pot.
  • 2 add ham hock and sear on all sides, for about 4 minutes.
  • 3 add onion, celery, red pepper, and garlic, cook for 4 minutes.
  • 4 add black eyed peas, chicken stock, bay leaves, thyme and salt and pepper.
  • 5 bring to a boil, reduce heat and simmer for 40 mins, or until the peas are creamy and tender, stirring occasionally, adding water and or stock as needed.
  • 6 stir bean mixture into cooked rice and adjust seasonings to taste.
  • 7 garnish with green onion.

Fire Crackers

Ingredients

  • 40 fat-free saltine crackers (1 sleeve)
  • 2 teaspoons spicy seasoning
  • crushed red pepper flakes
  • 10 ounces extra-sharp cheddar cheese, shredded

Recipe

  • 1 preheat oven to 500 degrees.
  • 2 arrange crackers in rows in a 15-by-10-inch jellyroll pan so that crackers are touching each other.
  • 3 sprinkle seasoning over crackers.
  • 4 sprinkle with pepper flakes.
  • 5 top evenly with cheese.
  • 6 place pan on center shelf of oven.
  • 7 close door and turn off oven.
  • 8 leave in oven at least 4 hours.
  • 9 it's ok to leave it overnight, but take it out first thing in the morning.
  • 10 break apart.
  • 11 they keep for several weeks stored in an airtight container.

Garlicky Buffalo Shrimp

Ingredients

  • Servings: 2
  • 1 teaspoon olive oil
  • 4 garlic cloves, minced
  • 2 tablespoons butter
  • 1 dash salt
  • 1 dash ground pepper
  • 2 tablespoons hot sauce (recommended frank's or texas pete)
  • 1 teaspoon barbecue sauce (optional)
  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons parsley, chopped

Recipe

  • 1 saute garlic in olive oil and butter over medium heat until translucent, being careful not to brown it, about 2 minutes.
  • 2 add a dash of salt and pepper, then hot sauce, and cook until garlic is softened, about a minute or two more. again, do not brown it or it will become bitter!
  • 3 taste and adjust seasonings. add bbq sauce if desired, or more hot sauce if you'd like it spicier. more butter can be added if desired, to make it milder as well.
  • 4 add shrimp and saute until done. (pink and slightly curled).
  • 5 remove from heat, toss with parsley.

Joe's Maryland Shrimp Bisque

Ingredients

  • 4 lbs shrimp (with heads on)
  • 4 quarts half-and-half
  • 1/4 lb butter
  • 3 large shallots
  • 5 garlic cloves
  • 4 tablespoons old bay seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon thyme
  • 1 teaspoon basil
  • 1 teaspoon black pepper
  • 2 (14 1/2 ounce) cans chicken broth
  • 1 cup sherry wine

Recipe

  • 1 pull heads off shrimp.
  • 2 in 4 quart saucepan put 2 cans chicken broth.
  • 3 put shrimp heads in saucepan with broth.
  • 4 bring to a boil.
  • 5 reduce heat and simmer for 30 minute.
  • 6 remove shrimp heads and discard.
  • 7 reduce liquid (to aprox 12 oz).
  • 8 in frying pan saute thinly sliced shallots and crushed garlic with 1 tbsp butter then turn off heat.
  • 9 pour reduced chicken stock (from #7) in 8 quart stock pot then add shallots & garlic and stir, then slowly add sherry and stir, then add half and half while stirring and remaining butter.
  • 10 add all spices and turn burner on low.
  • 11 clean and de-vein shrimp then cut shrimp in half.
  • 12 add shrimp to soup.
  • 13 turn heat up a little (no more than 170 degrees - will curdle if heat is too high. if it does curdle strain out shrimp and put soup in blender and blend on high until re-mixed and smooth then pour back in pot and add shrimp again) and cook for 1 hour stirring occasionally.
  • 14 serve and enjoy!

  • 2 tablespoons onion powder
  • 2 tablespoons garlic powder
  • 2 tablespoons italian seasoning
  • 2 teaspoons dried tarragon

Recipe

  • 1 combine all ingredients and mix well.
  • 2 place in a wide-hole shaker jar to use at the table in place of salt.

  • 3 lbs chuck roast (cubed)
  • seasoned flour (as needed)
  • 1/4 cup olive oil

  • 2 dredge beef in flour to coat. shake off excess.

  • 1/4 cup butter
  • 1/4 cup olive oil
  • 3 onions (sliced thin)
  • 6 garlic cloves (minced)
  • 1/3 cup brown sugar
  • 1/2 cup wine
  • 1 (28 ounce) can crushed tomatoes
  • 1 tablespoon thyme leaves (minced)
  • 2 teaspoons rosemary (minced)

  • fresh cracked pepper

Recipe

  • 1 heat butter and oil over low in a large skillet. add the onions and garlic. saute 10 minutes.

  • 5 add thyme, rosemary and seasonings. simmer 3 minutes.
  • 6 meanwhile, boil spaghetti until al dente. drain. toss with sauce.

Ingredients

  • 1 (24 ounce) package simply potatoes traditional mashed potatoes
  • 1 (15 ounce) can salmon
  • 1 -2 teaspoon lemon pepper seasoning
  • 3 eggs
  • 1 cup cornmeal

Recipe

  • 1 combine simply potatoes, salmon, seasoning, and 1 egg in a large bowl and mix well.
  • 2 form into patties. refrigerate 30 minutes. (can freeze for later cooking at this point.).
  • 3 lightly beat remaining 2 eggs in shallow bowl, and put cornmeal in another shallow bowl.
  • 4 dip chilled patties (if using frozen, no need to thaw) into eggs first, then cornmeal.
  • 5 fry until golden, or bake at 300 degrees for 20 minutes. serve warm or cold with tartar sauce or ketchup if desired. it's that easy!

Chuck Short Ribs

Total Time: 2 hrs 40 mins Preparation Time: 10 mins Cook Time: 2 hrs 30 mins

Ingredients

  • Servings: 4
  • 4 lbs chuck beef short ribs
  • 2 cups water
  • 1 onion, sliced

Recipe

  • 1 preheat oven to 325 degrees.
  • 2 i tried to get the membrane off the ribs, but was not successful, however, i think it would be best if it was removed.
  • 3 season meat as desired, i didn't use any seasoning at all.
  • 4 put the ribs with bone side up (curved side up), in the dish. place sliced onion on top of the rib.
  • 5 pour water beside the ribs, not over them, leaving the onions on top of the meat.
  • 6 cover with foil, cut slits in the foil. do not remove foil at all during cooking.
  • 7 cook for 2 - 2.5 hours, depending on how "done" you like it.

Garlicky Chicken And Shrimp Cream Sauce Pasta Dinner

Ingredients

  • Servings: 6
  • 1 lb linguine, cooked according to package directions
  • 2 chicken breasts, cubed
  • 4 tablespoons butter
  • 8 garlic cloves, minced
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 4 tablespoons flour
  • 1 cup chicken broth (double strength)
  • 1/2 teaspoon salt
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried cilantro (if using fresh use 1 t. chopped) or 1/2 teaspoon thyme (if using fresh use 1 t. chopped)
  • 1 (8 ounce) fat-free cream cheese (or regular)
  • 4 ounces sharp cheddar cheese, shredded
  • 1 (4 ounce) can diced green chilies
  • 8 ounces medium shrimp, cooked and peeled

Recipe

  • 1 melt butter in a large saucepan, add garlic, red pepper and cubed chicken. sauté until the chicken is no longer pink.
  • 2 sprinkle flour over the sautéed chicken and continue cooking, scraping up the browned bits from the chicken, until the flour just starts to turn a light brown. add remaining seasonings and the chicken broth, stirring until sauce thickens.
  • 3 add cream cheese, cheddar and green chilies to the sauce. stir until the sauce is smooth and heated through. add shrimp, stirring gently again until the shrimp are heated as well. serve sauce over cooked linguine or gentle fold linguine into the sauce to serve.

Crock Pot Beef N Beans

Ingredients

  • 1 lb dry pinto beans
  • 1 lb ground beef
  • 1/2 lb smoked sausage
  • 1 large onion, chopped
  • 2 garlic cloves
  • 1 (28 ounce) can of petite chopped tomatoes
  • 2 tablespoons taco seasoning
  • water

Recipe

  • 1 soak pinto beans overnight in water per package directions, rinse well.
  • 2 brown ground beef until no longer pink. dump rinsed beans, ground beef and smoked sausage into crock pot. chop onion and garlic, add to crock pot. dump in can of tomatoes and taco seasoning, stir well. add water until liquid is 1 to 2 inches above beans. (beans use a lot of liquid and you don't want them to get dry.) cook on low 8- 12 hours or high 5-7 hours. serve with garlic bread in a bowl.

Herb-roasted Chicken

Ingredients

  • Servings: 4
  • 1 (3 -3 1/2 lb) roasting chickens
  • 1/2 cup kosher salt
  • 1 quart water
  • 2 tablespoons butter, melted
  • 2 garlic cloves, minced (or 1 tsp. jarred minced garlic)
  • 1 teaspoon dried basil, crushed
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground sage
  • 1/2 teaspoon dried thyme, crushed
  • 1/4 teaspoon lemon-pepper seasoning or 1/4 teaspoon ground black pepper

Recipe

  • 1 place chicken in a 1 gallon zip-lock type bag. pour 1/2 cup kosher salt over chicken. carefully pour 1 quart water over chicken and seal bag.
  • 2 gently mix the salt/water solution to cover chicken. place sealed bag on a paper towel in the refrigerator and leave for 30 minutes. (this is called brining.).
  • 3 remove chicken from bag and rinse under cold water. pat chicken dry.
  • 4 preheat oven to 375°f
  • 5 in a small bowl, stir together basil, salt (1/2 tsp.), sage, thyme, and lemon pepper (or pepper).
  • 6 in another small bowl, melt butter. add minced garlic to butter and mix together.
  • 7 remove neck and giblets from chicken. place chicken, breast side down, on a rack in a shallow roasting pan. use a basting brush to paint garlic butter onto the chicken skin. sprinkle part of the herbs over the butter.
  • 8 turn chicken over and repeat with remaining butter and herbs.
  • 9 roast, uncovered, for 1.25 - 1.5 hours, or until drumsticks move easily in the sockets and a meat thermometer registers 180°f
  • 10 serve and enjoy!

Garlicky Braised Pot Roast

Total Time: 5 hrs 10 mins Preparation Time: 10 mins Cook Time: 5 hrs

Ingredients

  • Servings: 4
  • 1 -2 lb chuck roast
  • 1 -2 garlic clove
  • 2 -3 tablespoons oil (for browning)
  • italian seasoning (optional)
  • salt
  • pepper
  • 1 quart beef stock (i used a box of rachel ray's)
  • 3 tablespoons cornstarch
  • 1 cup milk

Recipe

  • 1 make holes in your chuck roast with the point of a sharp knife, only on one side of meat. make sure there's plenty of spots for your garlic.
  • 2 sliver garlic cloves into 3-4 pieces. stick the garlic slivers down into the holes you made in the roast.
  • 3 heat the oil in a large stockpot over medium-high heat until oil is ripply.
  • 4 season roast of both sides with salt and pepper. i patted down the roast after i did this to make sure it would stick.
  • 5 brown roast on both sides in oil.
  • 6 after roast is browned pour beef stock into the pan and scrape the bottom of the pan to get all the browned "goodies" off the bottom.
  • 7 turn the heat down to a simmer and cook roast for about 5-6 hours.
  • 8 when it's ready, remove the roast from the pan and whisk the milk and cornstarch together until there are no lumps. pour that into the pot and whisk together to make an amazing gravy.
  • 9 now you're ready to eat!

Ham & Cheese Tarts

Ingredients

  • 2 cups jiffy baking mix
  • 2/3 cup milk
  • 6 ounces cream cheese, softened
  • 1 tablespoon milk
  • 1/4 teaspoon orange peel
  • 1/4 teaspoon dry mustard
  • 1 teaspoon chives
  • 1 teaspoon seasoning salt
  • 1/4 teaspoon garlic salt
  • 1/2 cup finely chopped ham
  • 1/2 cup sour cream
  • paprika

Recipe

  • 1 preheat oven to 350°, grease a muffin pan.
  • 2 mix baking mix and milk together t form a soft dough.
  • 3 knead several times on floured surface and roll thin.
  • 4 using a 2 1/2 inch biscuit cutter, cut out 24 round biscuits.
  • 5 place each biscuit in greased muffin cup and mold to fit bottom and slightly up the sides.
  • 6 set aside.
  • 7 blend cream cheese, milk, orange peel, mustard, chives, seasoning salt and garlic salt.
  • 8 fold in ham and sour cream.
  • 9 spoon 1/2 tablespoon of filling into each cup.
  • 10 sprinkle with paprika and bake for 20-25 minutes.

Irish Croquettes : Corned Beef And Potato

Ingredients

  • Servings: 8
  • 2 cups mashed potatoes, left overs are fine seasoned with
  • salt, to taste,and
  • pepper, to taste
  • 3 cups finely chopped corned beef
  • 1 egg
  • 1 tablespoon finely chopped parsley
  • 1 egg
  • 2 tablespoons milk
  • dried breadcrumbs

Recipe

  • 1 combine potatoes, corned beef, egg, and seasoning.
  • 2 mix well.
  • 3 form into croquettes.
  • 4 dip into egg and milk mixture.
  • 5 roll in bread crumbs.
  • 6 fry in oil heated to about 375 degrees.
  • 7 enjoy.

Fire-roasted Veggies

Ingredients

  • Servings: 4
  • 2 medium potatoes, cubed into approximately 1/2-3/4 inch pieces
  • 1 green pepper, sliced into approximately 1 inch pieces
  • 1 medium onion, sliced into approximately 1 inch pieces
  • 1 head broccoli, florets,only,discard stems
  • 2 -3 tablespoons mccormick's roasted garlic monterey poultry seasoning
  • 1 tablespoon garlic powder
  • 1/2 cup extra virgin olive oil

Recipe

  • 1 wash, and slice all veggies as directed.
  • 2 place in large resealable plastic bag, add mccormicks seasoning, and garlic powder.
  • 3 seal bag and toss, to distribute seasoning.
  • 4 add olive oil.
  • 5 reseal bag and toss to coat veggies again.
  • 6 pour veggies into med foil pan, cover with aluminum foil, puncture foil a few times with knife to create vents.
  • 7 place on med fire, for about 1-1 1/2 hours.
  • 8 cook longer is desired.
  • 9 note: i am more of a dump cook the seasonings mentioned are approx.
  • 10 use more or less as you choose.

Herb-baked Scallops

Ingredients

  • Servings: 3
  • 1 lb bay scallops (frozen and thawed or fresh) or 1 lb sea scallops (frozen and thawed or fresh)
  • 1/4 cup butter or 1/4 cup margarine
  • 1 1/2 teaspoons dried parsley
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon salt
  • ground black pepper, to taste

  • 1 clean onions and cut into 1/2 to 3/4 inch pieces. put onions and 1/8 cup milk into blending container. puree until smooth.

  • 3 add all other ingredients and continue to beat with hand mixer until well blended.
  • 4 cover and put in refrigerator for at least 2 hours to allow granules to finish disolving and flavors to marry.
  • 5 note: you can add additional milk a few drops at a time until the consistency is to your liking.
  • 6 note 2: the measurements on the garlic powder and the bouillion granules is where i start. sometimes, after it has chilled for 2 hours, i taste it and may possibly add more seasoning.

Recipe

  • 1 place sliced onions in the bottom of the crock pot. rub spices over the roast, particularly the fatty part. place roast in crock pot with the fatty part on top.
  • 2 pour liquid smoke over all. cover and turn crock pot on low for 6-8 hours or overnight.
  • 3 remove roast from crock pot. discard all liquid and onions. shred the roast to the desired consistency, removing the fatty slab and bone.
  • 4 put the shredded meat back in the crock pot and mix with the chopped onions and barbeque sauce. mix well. cook on low for 4 or 5 hours. serve on sandwich buns.

Joe's Saute Onions

  • 1 -3 vidalia onion
  • olive oil
  • salt
  • butter (optional)
  • sugar (optional)

Recipe

  • 1 slice off the root and top ends of the onions, peel the onions. cut the onions in half. lay them cut side down and slice the onions lengthwise to desired thickness.
  • 2 i use a cast-iron skillet to saute'. coat the bottom of the skillet with olive oil about (1-teaspoon per onion). heat the skillet on medium high heat. add the onion slices and stir to coat the onions with the oil. spread the onions out evenly over the pan and let cook, stirring occasionally. after about 10 minutes, sprinkle some salt over the onions and or any seasonings such as (fajita or cajun), and if you want to, you can add some sugar to help with the caramelization process.add a little water to the skillet if they start to dry out. you can use butter instead of the olive oil, or a mixture of the two.
  • 3 let cook onions for 30 minutes to an hour or more, stirring every few minutes. as soon as the onions start sticking to the pan, let them stick a little and brown, but then stir them before they burn. after the first 20 to 30 minutes you may want to lower the temperature a little bit, and add a little more oil, if you find the onions begin to start burning. a fork will help you scrape up the browned bits from the bottom of the skillet as they begin to caramelize. as the onions cook down, you may find you need to scrape the skillet every minute or so. continue to cook and scrape, cook and scrape, until the onions are a rich, browned color.

John Besh's Creamy Polenta With Mascarpone Cheese

  • 1/2 cup organic yellow polenta (can substitute plain cornmeal)

  • 1 lightly season 2 cups water with salt and bring to a boil. quickly whisk in the polenta until it has been fully incorporated. reduce the heat to a low simmer. add the butter and allow the polenta to cook uncovered for 30 minutes. stir in the mascarpone and season to taste with salt.
  • 2 this may be made in advance and kept in the refrigerator. reheat in the microwave just before serving.
  • 3 assembly: reheat the three components of the dish separately.
  • 4 on each of 6 large plates, place a couple of spoonfuls of polenta in the center of the plate.
  • 5 carefully remove the bones from the hot ribs and place the beef short ribs over the bed of polenta.
  • 6 in a pan over medium heat, bring the reserved braising liquid to a simmer. once the sauce is hot, check for seasoning and, if needed, add a touch of salt and pepper. spoon the sauce around the beef short ribs and polenta. carefully place the root vegetable ragout on the beef. serve and enjoy!

Green Papaya Salad

  • 120 g small hard green unripe papayas
  • 1 1/2 tablespoons palm sugar
  • 1 tablespoon fish sauce
  • 1 -2 garlic clove
  • 25 g roasted peanuts
  • 25 g snake beans, cut into pieces
  • 1 tablespoon ground dried shrimp
  • 2 -6 bird's eye chilies, stems removed (6 will give a very hot result!!)
  • 50 g cherry tomatoes, cut into 2 pieces
  • 1/2 lime
  • sticky rice, to serve

Recipe

  • 1 peel the green papaya with the vegetable peeler and cut the papaya into long, thin shreds.
  • 2 if you have a mandolin, use the grater attachment.
  • 3 mix the palm sugar with the fish sauce until the sugar has dissolved.
  • 4 using a large, deep pestle and mortar, pound the garlic into a paste.
  • 5 add the roasted peanuts and pound roughly together with the garlic.
  • 6 add the papaya and pound softly, using a spoon to scrape down the sides, and turning and mix well.

Crock Pot Bbq Lamb Chops

  • 1 (16 ounce) bottle of your favourite barbecue sauce (i use honey smoke)
  • 6 lamb chops (you can use boneless or bone in)
  • seasoning (i use garlic plus by club house)

Recipe

  • 1 turn crockpot on high and remove liner (if you can). spread some bbq sauce on the bottom of the crock.
  • 2 run each chop under some warm water.
  • 3 put 2 chops on the bottom of the crock. put some bbq sauce and seasonings on each chop layer chops, sauce and seasonings. add the remaining sauce over the top.
  • 4 return the crock to the pot, put on lid.
  • 5 after about an hour, turn down to low. cook for about 5-6 hours. if you used bone-in chops, be careful as the chops are very tender and will fall off the bone.
  • 6 we usually have ours with mashed potatoes, or throw some potatoes in the oven and bake them for the last hour or so.
  • 7 it would probably work well with rice too if you want.

International Bean Dip

Herb-infused Red Wine Vinaigrette

Hoosier Potato Soup

  • 6 large potatoes
  • 1 large onion
  • 1/2 lb butter
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 1/2 quart water
  • 1/2 quart milk
  • 1 dozen egg
  • 2 (15 ounce) cans potatoes

Recipe

  • 1 start water boiling in a large pot (med. high heat). peel potatoes and score 1/4" deep on 4 sides with knife. use peeler to "square the potato" letting the thin 1/4" slices go into the water in the pot. then slice the remaining potatoes into 1/4" thick slices and put into pot.
  • 2 add: sliced onion, butter, water, milk, salt and pepper to just cover the potatoes.
  • 3 bring to a low boil, uncovered, and reduce heat to a medium simmer. do not scorch the milk! stir occasionally to keep the butter well mixed into the milk.
  • 4 hard boil the eggs, peel and set aside.
  • 5 simmer 20 minutes or until potatoes are done and have rounded edges. the thin slices from the peeler will provide the thickness for the soup at this time. taste and adjust seasoning.
  • 6 just before serving-slice or chop the eggs and add into soup. if you want thicker soup-drain cans of potatoes and add to pot, heat 2-3 minutes and serve.

Joel's Vegan Angel Hair Pasta Dinner

  • 100% whole wheat angel hair pasta
  • 3 artichoke hearts, chopped (from can or jar)
  • 8 ounces tomato sauce
  • 1 small zucchini, halved and sliced

  • 1 (4 1/2 ounce) can chopped black olives
  • 1/4 cup roasted red pepper, cut into smaller pieces (from jar)
  • 2 monterrey mushrooms, sliced
  • 2 teaspoons red wine vinegar
  • garlic powder

Recipe

  • 1 boil pasta until tender.
  • 2 while pasta is cooking, in separate pan, combine onion and zucchini, and just enough tomato sauce to keep vegetables from sticking. cook until zucchini begins to soften.
  • 3 add in mushrooms, roasted peppers, artichoke hearts and half the olives along with a little more tomato sauce. cook about 3 minutes, constantly stir to keep from sticking.
  • 4 when vegetables have cooked (leaving zucchini slightly crisp) combine the rest of the tomato sauce, olives, garlic powder, italian seasoning, and red wine vinegar. stir and cover for about 1 1/2 minutes to cook sauce down and steam veggies.
  • 5 uncover, remove from heat. rinse and drain pasta. divide pasta portions evenly into bowls. spoon sauce mixture on top of pasta and toss to evenly coat noodles. salt and pepper can be added to taste if desired.
