Lord's Acre Potato Salad

Ingredients
- Servings: 400
- 180 lbs potatoes
- 10 lbs onions
- 18 dozen eggs (hard boiled)
- 1 gallon mayonnaise (miracle whip)
- 2 1/2 gallons pickles (curry pickle maxine's curry pickle (a sweet pickle))
- 9 lbs sugar
- 2 1/2 quarts vinegar
- salt
- celery seed
Recipe
- 1 peel and dice potatoes, keeping in water so they do not turn brown.
- 2 peel and dice onions.
- 3 boil potatoes until just tender.
- 4 refrigerate onions.
- 5 refrigerate potatoes.
- 6 next day make hard boiled eggs, and dice.
- 7 combine all ingredients, adjusting seasonings to taste.
- 8 refrigerate overnight.
- 9 serve.
