Liz's Special Spinach Salad (with Portabellas)

Ingredients

- 1 (10 -12 ounce) package fresh spinach
- 3 portabella mushrooms
- 1 spanish onion, diced
- 1/2 cup dried cranberries
- 1/2 cup walnuts, chopped
- salt
- pepper
- olive oil
- red wine vinegar
- 1/2 lb blue cheese, crumbled
Recipe
- 1 wash, drain and stem spinach; dry thoroughly and place in a large bowl.
- 2 in broiler or barbecue, grill portobello mushrooms.
- 3 cut them into bite size cubes and add to the spinach.
- 4 add onion, cranberries and walnuts.
- 5 toss salad, seasoning with salt and pepper, to taste.
- 6 dress with olive oil and red wine vinegar, to taste, and toss again.
- 7 top with crumbled blue cheese and serve.
