Liz's Special Spinach Salad (with Portabellas)

Ingredients

  • Servings: 4
  • 1 (10 -12 ounce) package fresh spinach
  • 3 portabella mushrooms
  • 1 spanish onion, diced
  • 1/2 cup dried cranberries
  • 1/2 cup walnuts, chopped
  • salt
  • pepper
  • olive oil
  • red wine vinegar
  • 1/2 lb blue cheese, crumbled

Recipe

  • 1 wash, drain and stem spinach; dry thoroughly and place in a large bowl.
  • 2 in broiler or barbecue, grill portobello mushrooms.
  • 3 cut them into bite size cubes and add to the spinach.
  • 4 add onion, cranberries and walnuts.
  • 5 toss salad, seasoning with salt and pepper, to taste.
  • 6 dress with olive oil and red wine vinegar, to taste, and toss again.
  • 7 top with crumbled blue cheese and serve.
