Hearty Potato Ham Chowder

Ingredients

- 4 russet potatoes
- 2 tablespoons butter
- 1/4 cup scallion, sliced
- 1/2 cup green pepper, chopped
- 2 cups water
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 1/4 teaspoon paprika
- 3 tablespoons flour
- 1/3 cup water
- 2 cups milk
- 1 (12 ounce) can whole kernel corn
- 2 cups cooked ham, diced
- chopped parsley
Recipe
- 1 peel and dice potatoes.
- 2 in large saucepan, melt butter. saute scallion and green pepper until tender. add potatoes, 2 cups water, and seasonings. cover and simmer until potatoes are tender.
- 3 make a paste of flour and 1/3 cup water. stir into potato mixture.
- 4 add milk and cook until slightly thickened. stir in undrained corn and ham. heat through.
- 5 taste, adjust seasoning, and sprinkle with chopped parsley.
