Hearty Potato Ham Chowder

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 4 russet potatoes
  • 2 tablespoons butter
  • 1/4 cup scallion, sliced
  • 1/2 cup green pepper, chopped
  • 2 cups water
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 teaspoon paprika
  • 3 tablespoons flour
  • 1/3 cup water
  • 2 cups milk
  • 1 (12 ounce) can whole kernel corn
  • 2 cups cooked ham, diced
  • chopped parsley

Recipe

  • 1 peel and dice potatoes.
  • 2 in large saucepan, melt butter. saute scallion and green pepper until tender. add potatoes, 2 cups water, and seasonings. cover and simmer until potatoes are tender.
  • 3 make a paste of flour and 1/3 cup water. stir into potato mixture.
  • 4 add milk and cook until slightly thickened. stir in undrained corn and ham. heat through.
  • 5 taste, adjust seasoning, and sprinkle with chopped parsley.
