Hearty Italian Pasta Soup

Total Time: 50 mins Preparation Time: 5 mins Cook Time: 45 mins

Ingredients

  • Servings: 6
  • 1/2 lb lean ground turkey
  • 1/2 cup chopped onion
  • 2 (14 1/2 ounce) cans diced stewed tomatoes
  • 1 teaspoon italian seasoning
  • 2 (14 1/2 ounce) cans kidney beans, drained and rinsed
  • 3/4 cup uncooked whole wheat elbow macaroni
  • salt and pepper
  • parmesan cheese

Recipe

  • 1 brown turkey in large pot with onion; drain any fat; return to pot and toss with italian seasoning add tomatoes, beans and 8 cups water.
  • 2 bring to a boil; reduce heat and simmer for 30 minutes.
  • 3 while soup is simmering, cook macaroni; drain.
  • 4 add to soup just before serving.
  • 5 add salt, pepper and parmesan cheese to taste.
